The artwork was done by Zach Fleming, a local Brooklyn watercolor painter, a chef, and an avid wine lover.

This is a beautiful, fresh, relatively light and nicely balanced wine with a gorgeous array of vibrant fruit in both the aromas and the flavors. It pours on red and black cherry and raspberry while backing them up with good, taut acidity and light tannins.

In 1996, the Torres Family began planting vineyards on the black slate-like “Licorella” soils of Priorat. Salmos is considered a tribute to the Carthusian monks who planted the first grapevines in Priorat in 1095. Blend of : Cariñena, Garnacha and Syrah

VARIETALS: 85% Carignan, 10% Alicante, 4% Zinfandel, 1% Palomino VINEYARD: Oat Valley Vineyard LOCATION: Alexander Valley ALCOHOL: 12.5% TOTAL PRODUCTION: 440 cases WINEMAKER’S NOTES: We take the whole clusters and transfer them from bin into our 2 large concrete tanks. The berries remain intact and protected with a constant blanket of C02 until their native yeasts begin to ferment the grape sugars from the inside out. A slow mortification breaks down the color components in the skins, infusing the juice inside the still-unbroken berries with a vibrant red hue. When fully dry, it is pressed back into the concrete vessels for aging. Bottled after 6 months of aging. This wine shows the amazing depth of flavor from these rugged, ancient vines. VITICULTURAL AREA: Having saved a remarkable ancient vineyard from imminent “Cabernetification”, we continue to nurture its 130+ year-old vines, capturing a character unfound in mere 120-year-old vineyards. An original field-planted block, these Carignan plants are interspersed with Palomino (white variety from Jerez), Zinfandel and Alicante (a rare black-fruited vine that produces some of the darkest juice on the planet). Its decomposed sandy soils make it impossible for the vine-pest phylloxera to survive, leaving these some of the last remaining self-rooted vines in the state. All of our wines are made naturally, meaning no use of inoculated yeasts or bacteria. We use only native yeast to spark fermentation. We do not add any powdered tannins or enzymes. A minimal dose of S02 is added 4 weeks before bottling to some wines.

Deep, dark color and lovely aromas of blackberries and figs. This wine is full bodied and rich in flavor, but elegant with a long fruit-forward finish.

The goal with Gotes, (which means "droplets" in Catalan) is freshness. Organically farmed grapes are picked and fermented to show the minerality of the site and the fresher fruit profile of the wine. Thus, the wine has good natural acidity, which makes it ideal for hearty foods and cellaring.

Imported by Louis/Dressner Selections. This wine is 100% Carignan sourced from 40+ year old vines of which half is fermented in barrel and the other half by carbonic maceration. Alcohol 13%. The nose was grapey with berry aromas. In the mouth were grapey, ripe and fresh berries, purple notes, and good integration of juicy acidity. There were some black minerals in the slightly-round finish along with notes of violet. This is a quenching wine that does not require further aging.

50% Carignan 20% Syrah 30% Grenache

This a traditionally made, low yielding Carignan certified Organic by Ecocert. This red wine is from a parcel with a mix soil of sandstone and Clay in IGP Coteaux des Peyriac. A great example of the variety, the 2013 Minervois Carignan de Maris offers classic plum and purple-like fruit, spring flowers, crushed rock and hints of charcoal to go with medium to fullbodied richness, beautiful purity and surprisingly polished tannin, which isn’t easy to do with 100% Carignan.

IN THE VINEYARD The vineyard is managed traditionally, in accordance with the land’s natural features and with the aim of adapting to each varietal’s specificities. The quality of the techniques used is verified by a production charter with our partners, as well as constant monitoring by our oenologist. PICKING Late August-late September. VINIFICATION Grapes are pressed gently with pneumatic presses to keep the tannins in. The must is then settled to give a clear juice prior to alcoholic fermentation. Temperatures are kept at 18°C throughout alcoholic fermentation, which takes 10 to 14 days. Bottling is done with great care in an inert atmosphere. VARIETALS Carignan Cinsault Grenache Syrah
