Our native sweet cherries come from prime locations in the Black Forest, and include the time-honored varieties Dollenseppler, Schwarze Schüttler and Benjaminler. Our favorite Alsatian brandy, also known as eau de vie is the Mirabelle. We looked for 20 years and finally found the fruit at King Estate near Eugene, Oregon. They are small, beautiful little yellow plums that make a very delicate and aromatic eau de vie.

Distilled in 1981 and bottled in 2011. Aged 30 years in oak barrels. Dark amber with hints of copper, delicate nose with aromas of sweet spices (cinnamon and ginger) and light tobacco. Pearousia® is a very special collaboration between Fabbioli Cellars and Catoctin Creek. Doug Fabbioli, owner and vintner at Fabbioli Cellars, produced a lovely pear wine, and we distilled it into brandy. After being casked in oak for a time, this pear brandy has emerged as a truly lovely and unique offering, and our first fruit spirit. This pear brandy maintains the fresh aroma of the fruit, where you can smell the light and musky elements of pear intertwined with the caramel and vanilla of the oak. With your first sip, you taste the sweetness and flesh of the pear fruit, and the aftertaste leaves a long lingering and pleasant flavor of the spirit. Honestly, Pearousia is simply divine! Pearousia is an extremely limited release local pear brandy, produced from seasonal fruit offerings, and will be sold in 375 ml bottles so that it is accessible to more people. Only 1000 bottles will be made this season.

Troyanska slivovitz is a fruit distillate which has been aged for 7 years in the oak barrels. As it ages in the barrels the distillate acquires a distinctive color and aroma reminiscent of cognac or brandy, while still retaining its typical fruity flavor, which is enriched with woody undertones. For the best development of aroma and flavor we recommend consuming at room temperature.

Maraska Komovica is a “marc” grape brandy. Marc is the French term for the pulp behind left after pressing new wine and includes the grape skins, seeds, stems and yeast residue. The marc is used to make a second which is then distilled into a spirit of the same name. Maraska Komovica is produced in Croatia and matured in oak barrels of undisclosed size and time.

It is a classic product produced by R. Jelinek distillery for more than a century. We are very proud of using local apricots from our own orchards based in Southern part of the Czech Republic known as fruit and wine regions. Our master distillers keep the founder´s way of distilling using 3 different kettles during triple distillation.
