Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

FarmStock Rye Crop No. 003 is the third release of our limited edition annual Triple Terroir Whiskey™ – created from our rye grain, distilled and proofed with our water, and aged in our custom Vermont White Oak. This year’s release is a historical step for us – the first ever majority WhistlePig Whiskey. Comprised of 52% of our 3-year-old Rye Whiskey, blended with 31% 6-year aged whiskey and 17% 10 year aged whiskey from Alberta, Canada. The nose is sweet and aromatic with vanilla, maraschino, roasted chestnuts and hints of cigar box. On the palate, there are notes of oak, toffee and baking spices followed by softer notes of creme brulee and rose petals. The finish is warm and lasting with a pleasant rye spice.

Revolution Rye is 100% rye mashed, fermented, distilled and bottled in Warren, VT. The rye grains are sourced from the Northeast Grainshed and are non GMO. Distilled from both pure sugar cane and dark molasses, Dunc’s Backwoods Reserve is a traditional amber rum with a distinctly Dunc’s twist. Aged in specially selected small barrels of Hungarian oak in order to obtain a complex but surprisingly smooth flavor profile. Notes of sweet spice and vanilla round out this unique spirit.

Gin Sour mash family recipe used in its whiskeys yields a light, ubtle, juniper dry gin with a complex citrus finish.

This well aged Straight Rye Whiskey was created using koji fermentation. Each bottle is adorned with The Samurai Scientist – Jōkichi Takamine – who pioneered koji fermentation in the American whisky industry over a century ago. Each bottle barrel is bottled at strength, between 120 – 122 proof. The nose is intensely aromatic, with cinnamon, maple, and toasted marshmallow that develops with time in the glass. The palate has notes of tobacco, ginger, baking spices, and savory umami creating a remarkably rich, nuanced and elegant profile lending to soft, sweet notes that further color the mosaic of flavor.

Snowfall is the unaged heart of our Ridgeline Vermont Whiskey and has won multiple awards for its incredibly clean, full flavor. The nose is clean and refreshing, with hints of mint, fruit, and walnuts; on the palate, a sweet mixture of corn and spicy rye wrapping the nuttiness of barley. Very textured and multilayered, yet still soft despite the amount of alcohol. This finish is long, with successive waves of alcohol and discrete pepper and spices, accompanied by a faint nuttiness.

Our specialty grade Arabica beans are carefully picked, milled, and processed to ensure the highest quality coffee. The beans are shipped farmer direct to be roasted locally here in Vermont. The artisanal roasting coaxes the optimal flavor and aroma for every batch. We immediately grind and cold-brew the beans after roasting to maintain and preserve their distinctive character. The last stage involves infusing the coffee with our exceptionally pure liquor and lightly sweetening the blend. ​
