Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

This oaked gin starts life as Bainbridge Heritage Organic Doug Fir Gin, but undergoes a unique infusion process, resting on hard-toasted virgin American oak chips for at least 2 months. Unlike barrel-aged gins whose flavor characteristics can be muddled by the residuals of the barrel's former contents, the use of virgin toasted oak ads a warming hint of tannin and ads dimension and detail to the flavor of the freshly-cut Douglas fir boughs used to make this spirit. Golden straw color. Spicy, interesting aromas and flavors of egg nog, spiced meringue and fig-fennel pastry with a silky, bright, fruity medium-to-full body and a tingling, involved, long anise cookie, juniper, and lemon chutney finish. A delicious, spicy, flavor-packed barrel aged gin with lots of interesting cocktail possibilities.

Along with our Manifest Gin and Manifest Straight Rye, this spirit was one that we knew we were going to keep in regular rotation long before we ever opened our doors. Our founders' home bars had a regular rotation of barreled gin from a few American distillers, but there was a limited selection because it is somewhat of a new category in the spirit world. Like the category of gin, barreled gin gives craft distillers the ability to play with flavors to create a really unique variation without waiting 2 to 4+ years. Like blending any spirit, it is not a linear process. You can't just take a spirit, stick it in a previously used barrel and assume it's going to turn out great. We utilize a combination of oak styles in every batch. From Ex-Rye, new American oak, Ex-Bourbon and European oak. Each batch that we have developed includes blending different age gins from a variety of the cask styles. We invite you to taste each batch and let us know what you think.

New Riff Distilling’s Kentucky Wild Gin Bourbon Barreled is thoughtfully crafted with local wild foraged Kentucky botanicals, capturing the native flavors of the Ohio Valley and reflecting historical Kentucky gin ingredients. Twelve botanicals are distilled right in the pot, including a range of typical European gin ingredients (such as angelica, orris and licorice root, and three kinds of citrus). To these we add two local, hand foraged wild seasonings, including a wild juniper berry and the amazing American Spicebush—both of which are on the Slow Food Ark of Taste—plus a dash of Kentucky’s state flower, goldenrod. At the last, we blend in a bit of our new make rye whiskey spirit, enriching the texture and lengthening the flavor. The gin then rests in dripping fresh New Riff Bourbon barrels for five to seven months, achieving a mellowing note of vanilla oak. New Riff Kentucky Wild Gin Bourbon Barreled makes a fantastic Gin Cocktail with the bitters of your choice. Try it also in a Martinez—basically, a Manhattan made with our gin in the place of whiskey—delicious as the borders between gin and whiskey fade away.

Located in the historic town of Roscoe, New York, in a newly renovated 1929 firehouse, our distillery was inspired by the history of the United States, the peoples will, and the art of libations itself. For it was on that fateful day of January 16th 1920, when the 18th Amendment was enacted and outlawed the sale of liquor, that the heyday of American spirits was born. Within a few short weeks, underground networks were fully operational, supplying booze to every corner of the United States. Even the five U.S. Presidents who served our nation during Prohibition kept an ample supply on hand at the White House. Those suppliers, known as Bootleggers, Rumrunners and Moonshiners, risked everything to whet the appetite of a nation suddenly gone “dry”. Their customers were everywhere, they were the politicians, parents, teachers, and local businessmen who when told by their government, that they could no longer have a drink, decided to take matters into their own hands and source liquor from those crafty suppliers. This period, also known as the Jazz age, or better yet, “The Roaring 20’s” was a time in American history that brought many freedoms to the forefront. For the first time in American history, women were allowed to drink publicly with men in bars, whose very existence was forbidden. Six months into this prolific period women victoriously earned the right to vote under the 19th Amendment. In the end, some 14 years after it’s beginning, we enacted the 21st Amendment repealing Prohibition, as we discovered it was better to imbibe than to implore. Here’s to that enduring spirit, the reason we brought our fine liquor and distillery to life, and to you today. A hearty cheers and bottoms-up America!

After months in the barrel, the gin picks up an attractive amber color and mellowed flavor with whiskey notes added to the gin. Interestingly, Federal law does not allow an ‘age statement’ on gin labels; they’ve begun enforcing this more vigorously recently. Therefore, we call this ‘aged’ version of our Euphrosine Gin #9 our ‘Barrel-Finished Reserve’ and make reference to ‘casking’ it in American oak whiskey barrels on the label.
