Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

After your gin wins two gold medals in craft spirits competitions, what is the next step? For us, it was barrel-aging that same gin in second use American whiskey barrels. After months in the barrel, the gin picks up an attractive amber color and mellowed flavor with whiskey notes added to the gin. Interestingly, Federal law does not allow an ‘age statement’ on gin labels; they’ve begun enforcing this more vigorously recently. Therefore, we call this ‘aged’ version of our Euphrosine Gin #9 our ‘Barrel-Finished Reserve’ and make reference to ‘casking’ it in American oak whiskey barrels on the label.

This year’s reserve gin was conditioned in wet port casks from one of the top port-style wine producers in Napa Valley, California. Using freshly emptied wet port casks made from French oak from the Limousin forest results in a gin with a totally unique flavor, a wonderful rosered color and a silky-smooth mouth feel.

We’re Scotland’s original single-site brewery and distillery. So with Oak Gin, we marry brewing and distilling. Oak beer barrels meet our distillery’s gin. And the result is a rich oak spice with notes of caramel, vanilla, and a touch of fudge. Warming, at 42% abv, with a long, rich finish.

They say anything worth having is worth waiting for. We distill our premium gin with a blend of seven botanicals, then let it rest in hand-charred French oak barrels. After spending some quality time together, the piney notes of juniper combine with the vanilla finish from the oak to create a flavor that's unique, but familiar. Enjoy neat.

With an abundance of freshly drained Oregon Pinot noir barrels, it only makes sense to capitalize on the flavors locked within them. For this unique gin, we fill Pinot noir barrels with our Farmhouse Gin and let it rest for six months. The result is a complexly layered gin that tastes great on its own and mixed in cocktails. Modern Love Reserve Gin is a distinctive Modern American Gin creatively made with love and passion in beautiful Palm Springs, California. The majority of the eight infused botanicals are locally grown in our desert and throughout the Coachella Valley. Copper pot distilled, then rested in oak barrels once used for Napa Valley Pinot Noir to bring a welcome blush, softening and adding clarity to the undertone of Californian pink peppercorn, without losing this gin’s bold character. Its bright and distinctive finish holds well in modern creative cocktails or as a refreshing twist to the many timeless classics that reflect Palm Springs’ rich cocktail tradition.

We’ve been experimenting with ‘resting’ our Glorious Gin in oak barrels since 2011. Over that time we have produced 4 unique batches, each with a different oak treatment. Our original formula picks up notes of vanilla, baking spices, and a warmth from its time in oak. We will continue to tinker with our process until we find the perfect aging method.

This is a stunning American gin, made by FEW Spirits in Illinois, USA. It is rested in oak barrels, and the result of this is an increased level of sweetness, complexity and spice.

Dry Fly’s Barrel Aged Gin is a one year aged version of our regular gin. With the same botanical deck, it is aged in one of our own wheat whiskey barrels on second use. This aging is typically longer than most aged gins and results in a softer, rounded version of our gin with a bit of blonde color.

To make Imperial, we start with Roundhouse’s signature, award-winning Gin, distilled in small batches from the finest all natural botanicals, and then age it to perfection in oak casks for at least 10 months. The process introduces scotch and whiskey flavors causing our patrons to affectionately nickname it “Ginskey.” Imperial’s complex character and smoothness are unlike any spirit you’ve ever had.

The gin in 9 Moons comes from new French oak barrels. They have been filled with high strength Martin Miller’s Gin then aged for nine moon cycles, or circa nine months, in our barrel store in Borgarnes, Iceland. Then through a Solera Vat process of ageing and blending two different batches together, promises excellent consistency, whilst maintaining the complex and distinctive flavor profile.

Using a barrel finishing process from the 18th century, Bluecoat Barrel Finished Gin is produced by aging Bluecoat American Dry Gin in new American oak barrels for 3-8 months, providing a unique, well rounded and complex spirit. The finishing process utilizes charred barrels to round and soften the gin, introducing hints of caramel, vanilla and toffee without sacrificing juniper or pepper notes.

For our “Dual Cask” Gin, we seek the smoothness and mouth feel that oak aging imparts, but in a crisp, clean, New World style. To accomplish our goal, we do a secondary barrel infusion of hand-harvested Holy Basil, Lemon Verbena and Rosemary grown locally in Shenandoah County. The interplay of floral aromatics and herbal flavors with the richness of “Dual Cask” aging make our Gin unique in the marketplace.

Nearly every gin sold on the market today is bottled immediately after distilling, but Citadelle Réserve Vintage sleeps for several months in small, seasoned French oak barrels before being bottled. While this is very unusual today, this painstaking and lengthy practice is reminiscent of how gin was stored and transported more than 100 years ago when glass (too fragile and expensive), plastic and stainless steel were not options. Gabriel’s experimentation began in 2008 when he put his Citadelle Gin into a few old French oak casks – and voilà, Citadelle Gin Réserve was born and became the first barrel-aged Citadelle gin. It was a very rounded gin with notes of wood and vanilla while still being very juniper forward. It was such a new and unique gin that it sold out within weeks of its global introduction! Upon tasting Citadelle Réserve 2008, the Spanish press called Gabriel the “master of spirits.”
