Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

This is a stunning American gin, made by FEW Spirits in Illinois, USA. It is rested in oak barrels, and the result of this is an increased level of sweetness, complexity and spice.

Dry Fly’s Barrel Aged Gin is a one year aged version of our regular gin. With the same botanical deck, it is aged in one of our own wheat whiskey barrels on second use. This aging is typically longer than most aged gins and results in a softer, rounded version of our gin with a bit of blonde color.

To make Imperial, we start with Roundhouse’s signature, award-winning Gin, distilled in small batches from the finest all natural botanicals, and then age it to perfection in oak casks for at least 10 months. The process introduces scotch and whiskey flavors causing our patrons to affectionately nickname it “Ginskey.” Imperial’s complex character and smoothness are unlike any spirit you’ve ever had.

The gin in 9 Moons comes from new French oak barrels. They have been filled with high strength Martin Miller’s Gin then aged for nine moon cycles, or circa nine months, in our barrel store in Borgarnes, Iceland. Then through a Solera Vat process of ageing and blending two different batches together, promises excellent consistency, whilst maintaining the complex and distinctive flavor profile.

Using a barrel finishing process from the 18th century, Bluecoat Barrel Finished Gin is produced by aging Bluecoat American Dry Gin in new American oak barrels for 3-8 months, providing a unique, well rounded and complex spirit. The finishing process utilizes charred barrels to round and soften the gin, introducing hints of caramel, vanilla and toffee without sacrificing juniper or pepper notes.

For our “Dual Cask” Gin, we seek the smoothness and mouth feel that oak aging imparts, but in a crisp, clean, New World style. To accomplish our goal, we do a secondary barrel infusion of hand-harvested Holy Basil, Lemon Verbena and Rosemary grown locally in Shenandoah County. The interplay of floral aromatics and herbal flavors with the richness of “Dual Cask” aging make our Gin unique in the marketplace.

The brainchild of bartenders, Seattle’s small-batch Big Gin is a balance of nine botanicals, united in otherworldly flavor. Our bourbon barreled expression is rested for six months in once used bourbon barrels, pairing our welcoming note of juniper with a mellow oak flavor to savor as you sip. Nearly every gin sold on the market today is bottled immediately after distilling, but Citadelle Réserve Vintage sleeps for several months in small, seasoned French oak barrels before being bottled. While this is very unusual today, this painstaking and lengthy practice is reminiscent of how gin was stored and transported more than 100 years ago when glass (too fragile and expensive), plastic and stainless steel were not options. Gabriel’s experimentation began in 2008 when he put his Citadelle Gin into a few old French oak casks – and voilà, Citadelle Gin Réserve was born and became the first barrel-aged Citadelle gin. It was a very rounded gin with notes of wood and vanilla while still being very juniper forward. It was such a new and unique gin that it sold out within weeks of its global introduction! Upon tasting Citadelle Réserve 2008, the Spanish press called Gabriel the “master of spirits.”

Remember when genever was going to be the next big thing? Of course you don’t. That stillborn trend gave way to aged gin, which is now — cautiously — on the rise. Will barrel-aged gin be successful where genever was not? Let’s take a look at a bottling from one of the biggest names in gin, Beefeater. Burrough’s Reserve (tagline: “the gin for free thinkers”) is distilled in 268-liter small batches (the botanicals used are not published) before being aged for an unspecified time (not long, I think) in former Lillet aperitif wine barrels

Just like days when you need a sweatshirt on the beach, we’ve added a layer of warm and comforting flavors to our original gin. The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling. Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

Wire Works Special Reserve is a unique product that bridges the gap between the citrus brightness of our signature gin and the soft, sweet notes of whiskey. We begin with a special mixture of the botanicals used to create our American Gin. The resulting spirit is then aged in used American bourbon barrels and blended to produce a gin that possesses the distinctly soft textures and caramel-vanilla flavors of bourbon.

We’ve woven together thirteen Gin botanicals with 2 months and 28 days of oak aging in freshly emptied Waitsburg Bourbon casks. The result is a complex yet delicate spirit with layered aromas of warm baking spices, honey and herbaceous juniper. On the palate, soft maple sugar, toasted brioche and cream evolve into a vanilla finish. No sugar is added to this spirit, but a natural, pleasant sweetness comes from the mash of soft white organic Washington winter wheat. It is a nuanced, lyrical spirit with beautiful floral elements and a deep, rich wood influence.

Bourbon and Gin are two of our favorite things. Naturally, we wondered what would result if our gin was influenced by a tasty bourbon barrel. We carefully selected old bourbon barrels and used them to age our Four Peel Gin. The result is surprising and delicious.

We begin with our citrus forward gin and then we maserate lavender and rosehips so we can pull out the fresh botanical oils which provides our gin with a distinct look and mouthfeel. We finish this gin in virgin oak barrels for 2 months to add a natural spice to our already flavorful gin.

We used our popular Ethereal gin to create our very first Barrel-Aged Ethereal expression. Aged for 18 months in used bourbon barrels. A beautifully aged gin, both bold and demure, with strong notes of mellowed brown spice and dried fruit. It is rounded out by vanilla, caramelized wood sugars and a soft palate

The Polar Vortex has met its match with the first J. Carver Barrel Gin distilled in Minnesota. A whiskey lover’s gin, this unique, rarely produced spirit is perfect for drinking straight or in craft cocktails year-round. Distilled from local grains, wild rice, and a medley of hand-selected botanicals including locally-grown everlasting clover, star anise, cinnamon, sweet orange peel and cardamom, the gin then rests in white oak barrels made in Minnesota until a balance is achieved between the flavors from the botanicals and influences from the charred oak barrels.

Our Series 6 Gintrigue features our London Dry style gin which is aged 6-months in oak barrels which held bourbon (4 years) and cognac (7 years). Sweet juniper on the nose followed by complex bourbon, cognac and botanicals in the mid-palate with a return to sweet juniper on the finish. Perfect as a sipping gin, as a mule or as an Old Fashioned. Botanicals include juniper, coriander, angelica, cassia (cinnamon), orris root and more. We call this "Gintrigue," because of the gintriguing and ginsperational flavors!

This oaked gin starts life as Bainbridge Heritage Organic Doug Fir Gin, but undergoes a unique infusion process, resting on hard-toasted virgin American oak chips for at least 2 months. Unlike barrel-aged gins whose flavor characteristics can be muddled by the residuals of the barrel's former contents, the use of virgin toasted oak ads a warming hint of tannin and ads dimension and detail to the flavor of the freshly-cut Douglas fir boughs used to make this spirit. Golden straw color. Spicy, interesting aromas and flavors of egg nog, spiced meringue and fig-fennel pastry with a silky, bright, fruity medium-to-full body and a tingling, involved, long anise cookie, juniper, and lemon chutney finish. A delicious, spicy, flavor-packed barrel aged gin with lots of interesting cocktail possibilities.

Along with our Manifest Gin and Manifest Straight Rye, this spirit was one that we knew we were going to keep in regular rotation long before we ever opened our doors. Our founders' home bars had a regular rotation of barreled gin from a few American distillers, but there was a limited selection because it is somewhat of a new category in the spirit world. Like the category of gin, barreled gin gives craft distillers the ability to play with flavors to create a really unique variation without waiting 2 to 4+ years. Like blending any spirit, it is not a linear process. You can't just take a spirit, stick it in a previously used barrel and assume it's going to turn out great. We utilize a combination of oak styles in every batch. From Ex-Rye, new American oak, Ex-Bourbon and European oak.
