Distillery Notes “Henry DuYore’s Rye Whiskey speaks to our aspiration to release spirits that balance the character of their grains of origin with the influence of the years passed in oak barrels. An abiding fondness for the flavor of rye inspired us to produce our own bottling. With this Rye Whiskey, we sought to temper the admirable innate feistiness of rye with the rich, supple flavor of malted barley. Rye proved to be a worthy adversary for the old-fashioned Ransom mashing system, which we originally designed for the more cooperative malted barley. The texture of the rye grain made it impossible to push our house-mashed base wort above fifty percent rye, so we selected a well-made rye white dog to bring the rye to the forefront of our blend. We feel that the resulting whiskey retains the texture, aromatics, and flavor of an artisan pot distilled spirit. We are proud to offer up this whiskey as a fitting tribute to the legendary old moonshiner Henry DuYore. Although he is now completely reformed, Henry’s true identity cannot be revealed. Unlike most spirits, vodka gets its flavor entirely from its primary ingredients, whether that be potatoes, grains or even gimmicky things like apples or grapes. For the distiller and connoisseur, the challenge is finding the right ingredients and using them in the right proportions. To that end, we tried scores of combinations and, in the end, landed on a mixture of spelt and triticale. (Spelt is a strain of wheat that imparts nutty sweetness. Triticale is a centuries-old hybrid of wheat and rye, bringing smooth creaminess.) Equally important to our process is the fact that we distill artfully – not over-distilling. Once for purity, twice for smoothness. That’s it. The result is a vodka that’s unlike any you’ve had before, and any that’s on the market today.

After drinking Limoncello for a few years we came to wonder why isn't there a Limecello? After all we have our Limoncello's and our Arancello's (orange) but where did our friend the lime go? So we conspired to create a Limecello. After putting together our first batch I took that first sip. It was amazing! I had to play; tequila, light beers, rum, gin, vodka, it goes everywhere and does it well. I've even cooked and marinated with it. Bottom line, if you like/love the flavor of lime, then this should be in your life somewhere. Limecello triggered the conception of Crescendo. A unique and widely loved flavor in a new format that is completely organic was/is the idea. In the end we decided it was important to share all of these delicious flavors with you. But we still salute it as the impetus to a journey.

The New York Times called Clear Creek's Pear Brandy "quite spectacular," and it is. Made from Bartlett pears grown in Clear Creek's own orchards in Parkdale, Oregon, the fruit is crushed and fermented and then the whole mash is run through German-made pot stills. Pure pear on the nose, the taste is strong but distinctly pear-flavored, finishing clean.

Spiritopia Apple Liqueur is a unique all-apple spirit bursting with the flavor of a half a bushel of apples in every bottle (750ml).
