The Western Slope of Colorado has unusually hot and dry summer days but cold nights with temperature swings of up to 50 degrees a day. This creates an environment perfect for Peach orchards. Colorado Peaches are big, juicy fruit that drip down your face with every bite. At Rising Sun Distillery we went straight to the farmer and got our peaches from the Cox family farms. In July and August Colorado is at the peak of the peach harvest, which is when we get to work mashing and juicing all of the peaches that go into Rising Sun Distillery Colorado Peach Brandy. After fermentation we distill the peach wine into a beautifully balanced eau 'd vie, then we take the eau d' vie and put it on oak for several months, checking it regularly to insure that the oak flavor doesn't over power the peach essence. After the color darkens and the peach is enhanced by the vanilla of the oak we know it is ready to bottle. Supporting local Colorado farms to produce the best spirits is near and dear to our beliefs at Rising Sun Distillery. Gluten free Colorado Peach Brandy is lovely served over ice or with a splash of lemonade.

Fresh Oregon and Washington cherries are crushed, fermented, and distilled into clear, delicate Cherry Brandy, also known as Kirschwasser. In German, Kirschwasser translates to “cherry water”, and is an integral ingredient in Swiss fondue, Black Forest cake and tortes. We use dark, sweet table cherries, giving the spirit a soft aroma of vanilla and almond.

Quarter Branch Apple Brandy started life as a collaboration between Catoctin Creek and Blue Bee Cidery in Richmond, Virginia. Courtney Mailey, the proprietor of this exciting apple cidery, brought us a nearly infinite supply of apple wine samples, from which we picked the perfect blend of heritage apples: Old Winesap, Arkansas Black, Albemarle Pippin, Stayman, with a tiny touch of Pink Lady. The fermented cider was distilled at Catoctin Creek, and then put away for two years in new Minnesota white oak casks, where they lovingly sat in our hot Virginia summers, cold Virginia winters, and soaked up every ounce of the wood inside the barrel. The result is a stunning apple brandy true to what our colonial ancestors would have enjoyed!

For our take on America’s oldest spirit we partner with a fourth generation apple grower 200 miles from the distillery. We ferment a blend of biodynamic apple juice then rest and distill the cider on the lees in our pot still to produce the robust apple notes of Chapmans. The resulting apple spirit is dual-aged in French and American oak for not more than 6 months, resulting in bold orchard fruit notes. The finished blend highlights our favorite qualities of apple brandy from French and American traditions. We think Johnny “Appleseed” Chapman would be proud. The nose is fruit forward with notes of sweet citrus, baked golden delicious apple, and pear. The palate has a medium body carrying Bartlett pear, honey dew, and white chocolate. The sip finishes with notes of caramelized ginger, overripe pear and vanilla- lingering and complex. Delicious on its own, Chapmans is also delightful added to a glass of champagne or mixed in an Old Fashioned style cocktail like the American Trilogy.

Troyanska pear brandy is a fruit distillate, which is characterized by its delicate fruity flavor and aroma typical of pears. This is due to the Williams variety, from which the distillate is prepared. Pear brandy, as well as our other distillates, passes through a three-stage distillation process with subsequent aging, which contributes to a harmonization of aroma and flavor and an overall roundedness of the distillate. Pear brandy, unlike slivovitz is best consumed slightly chilled for you to experience the full development of aroma and flavor.
