Our award-winning Bathtub Gin takes a while to perfect, but we think it’s worth it. First, copper pot-distilled gin is made with juniper, coriander and other fragrant botanicals, but we don’t stop there. Instead, we take a portion of this gin and painstakingly infuse it with a further six fresh botanicals - a process which takes a whole week to do…(which might seem like a lot of effort, but you get out what you put in as they say, and if we want a delicious gin then it needs to be made deliciously!) This infusion process allows those fresh botanical flavours – too delicate to survive traditional distillation – to shine through, and Bathtub Gin is left with its unique flavour and distinctive hue. Tasting Notes: Nose: Fresh and bold juniper leads the way with fragrant citrus and cardamom. Notes of fresh orange peel and cinnamon add to an enticing nose. Taste: Juniper again leads, but there’s plenty more besides. The mouthfeel is thick and creamy whilst the cloves, coriander and cardamom offer depth. Finish: Here the supporting botanicals really shine with lingering cardamom and orange peel on the tail.

Our first iteration, Hepple Gin Our story started in one of England’s last wild sanctuaries in the remote moors of Northumberland, the whipping winds amongst the age of juniper bushes at Hepple, and our pursuit of a gin to make the perfect dry martini. The only way to capture the wild heart of this juniper was to completely rethink how the gin was made. Thus our Triple Technique was born. ON THE NOSE There is an immediate fresh scent of green apple, bright grapefruit and spicy juniper. This then opens up to reveal underlying notes of Douglas Fir, and fragrant blackcurrant. ON SIPPING The initial fresh citrus flavours evolve into unexpected ripe cantaloupe melon, the spicy fragrant juniper continues to coat the palate. There is a luscious sweet mouthfeel, which is both juicy and quenching. THE FINISH Extremely long and this is where the juniper reveals itself further with flavours alternating between sandalwood and cedar with a notable savoury presence that complements the sweet blackcurrant and liquorice. The sweet juiciness is maintained throughout the finish.

The redefinition of the category begins with The Belgian Wheat Act - the first in a series of expressions distilled from craft beer styles. This Act starts with a Belgian Wheat mash composed of barley, wheat and oats. The mash is infused with coriander, sweet orange peel, lemongrass, cascade and chinook hops. The same botanicals are then vapor infused into the spirit with the addition of juniper berries. This Genever Style Gin is distilled four times - never above 160 proof. Distilled in the old Dutch colony of Brooklyn from grains grown in New York State, Chief Gowanus is based on an early American recipe for making a version of “Holland gin” out of American rye whiskey. With a little help from Brooklyn’s resident historian of drink, Dr. David Wondrich, we’ve taken our unaged, double-distilled rye whiskey, put it back in our traditional pot still with a few shovelfuls of juniper berries and a handful of Cluster hops (the variety likely to have been in use in 1809, from whence the recipe originates) and run it through a third time. Three months in an oak barrel to smooth it out a bit and the result is gin that, we like to believe, would have brought a smile to the legendary Gowanus, great chief of the Canarsees back in the days when Brooklyn was still Dutch.
