Dubbed Ornamental Gin in homage to the ornamental steel that was made on the site we now work on for over 100 years, its made entirely from scratch on site from a base of 100% non-GMO organic corn, just like our vodka. All gins must of course be flavored with juniper, and in addition to this ours includes a very special mix of 15 additional botanicals on top—elderflowers, passion flower, lots of citrus and hops are just a few! After a long, slow and careful distillation, the liquid is left to rest for a month to let the flavors meld. After being slowly proofed down to 40% ABV over a further period of weeks, our gin is finally gently filtered (but not chill filtered, which might affect the delicate flavors!) just before bottling. Works well in all the classics, or on the rocks with a twist.

True Born serves notice that there is more to Gin than neutral spirits infused with a myriad of botanicals. The redefinition of the category begins with The Belgian Wheat Act - the first in a series of expressions distilled from craft beer styles. This Act starts with a Belgian Wheat mash composed of barley, wheat and oats. The mash is infused with coriander, sweet orange peel, lemongrass, cascade and chinook hops. The same botanicals are then vapor infused into the spirit with the addition of juniper berries. This Genever Style Gin is distilled four times - never above 160 proof. The resulting spirit is unlike any Gin you've ever had - a complex mouthfeel complemented by bright citrus flavors and light notes of juniper.

Appearance/Presentation The dark amber rum is secured in a 750 ml bottle by a plastic cork sealed with black wax. The front of the bottle displays the Thomas Tew logo in white and notes on a small label that it is hand bottled, with the barrel number noted. This review was from a bottle produced from barrel number 145. Nose For me, Pot Stilled rums are always fun to explore. Depending on the region of the world and distiller, each one brings its own unique flavor and funkiness that cannot be found in most column still rums. When I smelled the aroma of Thomas Tew it was no exception. I detected a nice funky mineral note, sulphur, charred oak, vanilla, molasses and a very light apricot note. Palate The first sip provided a lovely wash of sweet caramel balanced by smoky oak. As the oak fades a strong hit of vanilla comes into play that is punctuated by another pop of oak that is married with a light hit of sulphur and apricots. The apricot and mineral note linger into the finish.

This whiskey started its life as an IPA. After retaining the IPA flavors through distillation we aged the whiskey in American oak barrels. Once the aging process was complete, we finished the whiskey by dry hopping with Citra and Sorachi Ace hops for bright and complementary floral notes.
