Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

Remember when genever was going to be the next big thing? Of course you don’t. That stillborn trend gave way to aged gin, which is now — cautiously — on the rise. Will barrel-aged gin be successful where genever was not? Let’s take a look at a bottling from one of the biggest names in gin, Beefeater. Burrough’s Reserve (tagline: “the gin for free thinkers”) is distilled in 268-liter small batches (the botanicals used are not published) before being aged for an unspecified time (not long, I think) in former Lillet aperitif wine barrels

Just like days when you need a sweatshirt on the beach, we’ve added a layer of warm and comforting flavors to our original gin. The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling. Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

Wire Works Special Reserve is a unique product that bridges the gap between the citrus brightness of our signature gin and the soft, sweet notes of whiskey. We begin with a special mixture of the botanicals used to create our American Gin. The resulting spirit is then aged in used American bourbon barrels and blended to produce a gin that possesses the distinctly soft textures and caramel-vanilla flavors of bourbon.

We’ve woven together thirteen Gin botanicals with 2 months and 28 days of oak aging in freshly emptied Waitsburg Bourbon casks. The result is a complex yet delicate spirit with layered aromas of warm baking spices, honey and herbaceous juniper. On the palate, soft maple sugar, toasted brioche and cream evolve into a vanilla finish. No sugar is added to this spirit, but a natural, pleasant sweetness comes from the mash of soft white organic Washington winter wheat. It is a nuanced, lyrical spirit with beautiful floral elements and a deep, rich wood influence.

Bourbon and Gin are two of our favorite things. Naturally, we wondered what would result if our gin was influenced by a tasty bourbon barrel. We carefully selected old bourbon barrels and used them to age our Four Peel Gin. The result is surprising and delicious.

We begin with our citrus forward gin and then we maserate lavender and rosehips so we can pull out the fresh botanical oils which provides our gin with a distinct look and mouthfeel. We finish this gin in virgin oak barrels for 2 months to add a natural spice to our already flavorful gin.

We used our popular Ethereal gin to create our very first Barrel-Aged Ethereal expression. Aged for 18 months in used bourbon barrels. A beautifully aged gin, both bold and demure, with strong notes of mellowed brown spice and dried fruit. It is rounded out by vanilla, caramelized wood sugars and a soft palate

The Polar Vortex has met its match with the first J. Carver Barrel Gin distilled in Minnesota. A whiskey lover’s gin, this unique, rarely produced spirit is perfect for drinking straight or in craft cocktails year-round. Distilled from local grains, wild rice, and a medley of hand-selected botanicals including locally-grown everlasting clover, star anise, cinnamon, sweet orange peel and cardamom, the gin then rests in white oak barrels made in Minnesota until a balance is achieved between the flavors from the botanicals and influences from the charred oak barrels.

Our Series 6 Gintrigue features our London Dry style gin which is aged 6-months in oak barrels which held bourbon (4 years) and cognac (7 years). Sweet juniper on the nose followed by complex bourbon, cognac and botanicals in the mid-palate with a return to sweet juniper on the finish. Perfect as a sipping gin, as a mule or as an Old Fashioned. Botanicals include juniper, coriander, angelica, cassia (cinnamon), orris root and more. We call this "Gintrigue," because of the gintriguing and ginsperational flavors!

This oaked gin starts life as Bainbridge Heritage Organic Doug Fir Gin, but undergoes a unique infusion process, resting on hard-toasted virgin American oak chips for at least 2 months. Unlike barrel-aged gins whose flavor characteristics can be muddled by the residuals of the barrel's former contents, the use of virgin toasted oak ads a warming hint of tannin and ads dimension and detail to the flavor of the freshly-cut Douglas fir boughs used to make this spirit. Golden straw color. Spicy, interesting aromas and flavors of egg nog, spiced meringue and fig-fennel pastry with a silky, bright, fruity medium-to-full body and a tingling, involved, long anise cookie, juniper, and lemon chutney finish. A delicious, spicy, flavor-packed barrel aged gin with lots of interesting cocktail possibilities.

Along with our Manifest Gin and Manifest Straight Rye, this spirit was one that we knew we were going to keep in regular rotation long before we ever opened our doors. Our founders' home bars had a regular rotation of barreled gin from a few American distillers, but there was a limited selection because it is somewhat of a new category in the spirit world. Like the category of gin, barreled gin gives craft distillers the ability to play with flavors to create a really unique variation without waiting 2 to 4+ years. Like blending any spirit, it is not a linear process. You can't just take a spirit, stick it in a previously used barrel and assume it's going to turn out great. We utilize a combination of oak styles in every batch. From Ex-Rye, new American oak, Ex-Bourbon and European oak. Each batch that we have developed includes blending different age gins from a variety of the cask styles. We invite you to taste each batch and let us know what you think.

New Riff Distilling’s Kentucky Wild Gin Bourbon Barreled is thoughtfully crafted with local wild foraged Kentucky botanicals, capturing the native flavors of the Ohio Valley and reflecting historical Kentucky gin ingredients. Twelve botanicals are distilled right in the pot, including a range of typical European gin ingredients (such as angelica, orris and licorice root, and three kinds of citrus). To these we add two local, hand foraged wild seasonings, including a wild juniper berry and the amazing American Spicebush—both of which are on the Slow Food Ark of Taste—plus a dash of Kentucky’s state flower, goldenrod. At the last, we blend in a bit of our new make rye whiskey spirit, enriching the texture and lengthening the flavor. Located in the historic town of Roscoe, New York, in a newly renovated 1929 firehouse, our distillery was inspired by the history of the United States, the peoples will, and the art of libations itself. For it was on that fateful day of January 16th 1920, when the 18th Amendment was enacted and outlawed the sale of liquor, that the heyday of American spirits was born. Within a few short weeks, underground networks were fully operational, supplying booze to every corner of the United States. Even the five U.S. Presidents who served our nation during Prohibition kept an ample supply on hand at the White House. Those suppliers, known as Bootleggers, Rumrunners and Moonshiners, risked everything to whet the appetite of a nation suddenly gone “dry”. Their customers were everywhere, they were the politicians, parents, teachers, and local businessmen who when told by their government, that they could no longer have a drink, decided to take matters into their own hands and source liquor from those crafty suppliers. This period, also known as the Jazz age, or better yet, “The Roaring 20’s” was a time in American history that brought many freedoms to the forefront. For the first time in American history, women were allowed to drink publicly with men in bars, whose very existence was forbidden. Six months into this prolific period women victoriously earned the right to vote under the 19th Amendment. In the end, some 14 years after it’s beginning, we enacted the 21st Amendment repealing Prohibition, as we discovered it was better to imbibe than to implore. Knickerbocker Gin, conditioned in spent New Holland Artisan Spirits barrels, makes a delicious barrel gin. Toasty notes from the spirit-soaked wood accentuate the vibrant juniper character and provide a deep and smooth contrast to the lively aromatics. Light bronze color and aroma of toasted backing spices. Soft and round mouthfeel with flavors of caramel and gently warming spice leads to a clean finish.

Organically grown grains sourced here in Illinois serve as the base of this gin. Distilled with 11 botanicals, notably cardamom, hibiscus and Szechwan peppercorn. A great spin on the classic juniper spirit. Logan Square is doing some fun things nowadays.

World Gin Awards - Best Matured Gin. Corsair Barrel Aged Gin is an artisanal gin from Tennessee. The Corsair Barrel Aged Gin matured in barrels which were previously filled with Corsair Spiced Rum, giving this aged gin strong fall spice notes like cinnamon, nutmeg, clove and vanilla beans. This gin is great for a twist on an old fashioned - differs significantly from known gins!

Deep and rich flavor profile, pure & botanical finish. Bristow Reserve spends 1 year in new 53 gallon American oak barrels, char #3. The use of larger oak barrels allows for the gin’s juniper intensity to mellow out, while also adding notes of caramel and some hints of spice. The aging also allows for the aromatics of the botanicals to integrate into the gin. We believe that at 113 proof this gin is very approachable. Allowing for plenty of flavors from the oak, but not disrespecting the original Bristow flavors.

After your gin wins two gold medals in craft spirits competitions, what is the next step? For us, it was barrel-aging that same gin in second use American whiskey barrels. After months in the barrel, the gin picks up an attractive amber color and mellowed flavor with whiskey notes added to the gin. Interestingly, Federal law does not allow an ‘age statement’ on gin labels; they’ve begun enforcing this more vigorously recently. Therefore, we call this ‘aged’ version of our Euphrosine Gin #9 our ‘Barrel-Finished Reserve’ and make reference to ‘casking’ it in American oak whiskey barrels on the label.
