Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

This oaked gin starts life as Bainbridge Heritage Organic Doug Fir Gin, but undergoes a unique infusion process, resting on hard-toasted virgin American oak chips for at least 2 months. Unlike barrel-aged gins whose flavor characteristics can be muddled by the residuals of the barrel's former contents, the use of virgin toasted oak ads a warming hint of tannin and ads dimension and detail to the flavor of the freshly-cut Douglas fir boughs used to make this spirit. Golden straw color. Spicy, interesting aromas and flavors of egg nog, spiced meringue and fig-fennel pastry with a silky, bright, fruity medium-to-full body and a tingling, involved, long anise cookie, juniper, and lemon chutney finish. A delicious, spicy, flavor-packed barrel aged gin with lots of interesting cocktail possibilities.

Along with our Manifest Gin and Manifest Straight Rye, this spirit was one that we knew we were going to keep in regular rotation long before we ever opened our doors. Our founders' home bars had a regular rotation of barreled gin from a few American distillers, but there was a limited selection because it is somewhat of a new category in the spirit world. Like the category of gin, barreled gin gives craft distillers the ability to play with flavors to create a really unique variation without waiting 2 to 4+ years. Like blending any spirit, it is not a linear process. You can't just take a spirit, stick it in a previously used barrel and assume it's going to turn out great. We utilize a combination of oak styles in every batch. From Ex-Rye, new American oak, Ex-Bourbon and European oak. Each batch that we have developed includes blending different age gins from a variety of the cask styles. We invite you to taste each batch and let us know what you think.

New Riff Distilling’s Kentucky Wild Gin Bourbon Barreled is thoughtfully crafted with local wild foraged Kentucky botanicals, capturing the native flavors of the Ohio Valley and reflecting historical Kentucky gin ingredients. Twelve botanicals are distilled right in the pot, including a range of typical European gin ingredients (such as angelica, orris and licorice root, and three kinds of citrus). To these we add two local, hand foraged wild seasonings, including a wild juniper berry and the amazing American Spicebush—both of which are on the Slow Food Ark of Taste—plus a dash of Kentucky’s state flower, goldenrod. At the last, we blend in a bit of our new make rye whiskey spirit, enriching the texture and lengthening the flavor. The gin then rests in dripping fresh New Riff Bourbon barrels for five to seven months, achieving a mellowing note of vanilla oak. Located in the historic town of Roscoe, New York, in a newly renovated 1929 firehouse, our distillery was inspired by the history of the United States, the peoples will, and the art of libations itself. For it was on that fateful day of January 16th 1920, when the 18th Amendment was enacted and outlawed the sale of liquor, that the heyday of American spirits was born. Within a few short weeks, underground networks were fully operational, supplying booze to every corner of the United States. Even the five U.S. Presidents who served our nation during Prohibition kept an ample supply on hand at the White House. Those suppliers, known as Bootleggers, Rumrunners and Moonshiners, risked everything to whet the appetite of a nation suddenly gone “dry”. Their customers were everywhere, they were the politicians, parents, teachers, and local businessmen who when told by their government, that they could no longer have a drink, decided to take matters into their own hands and source liquor from those crafty suppliers. This period, also known as the Jazz age, or better yet, “The Roaring 20’s” was a time in American history that brought many freedoms to the forefront. For the first time in American history, women were allowed to drink publicly with men in bars, whose very existence was forbidden. Six months into this prolific period women victoriously earned the right to vote under the 19th Amendment. In the end, some 14 years after it’s beginning, we enacted the 21st Amendment repealing Prohibition, as we discovered it was better to imbibe than to implore. Knickerbocker Gin, conditioned in spent New Holland Artisan Spirits barrels, makes a delicious barrel gin. Toasty notes from the spirit-soaked wood accentuate the vibrant juniper character and provide a deep and smooth contrast to the lively aromatics. Light bronze color and aroma of toasted backing spices. Soft and round mouthfeel with flavors of caramel and gently warming spice leads to a clean finish.

Organically grown grains sourced here in Illinois serve as the base of this gin. Distilled with 11 botanicals, notably cardamom, hibiscus and Szechwan peppercorn. A great spin on the classic juniper spirit. Logan Square is doing some fun things nowadays.

Aged in virgin American white oak whiskey barrels, this smokin', oaken gin is a whiskey drinker's botanical dream. World Gin Awards - Best Matured Gin. Corsair Barrel Aged Gin is an artisanal gin from Tennessee. The Corsair Barrel Aged Gin matured in barrels which were previously filled with Corsair Spiced Rum, giving this aged gin strong fall spice notes like cinnamon, nutmeg, clove and vanilla beans. This gin is great for a twist on an old fashioned - differs significantly from known gins!

Deep and rich flavor profile, pure & botanical finish. Bristow Reserve spends 1 year in new 53 gallon American oak barrels, char #3. The use of larger oak barrels allows for the gin’s juniper intensity to mellow out, while also adding notes of caramel and some hints of spice. The aging also allows for the aromatics of the botanicals to integrate into the gin. We believe that at 113 proof this gin is very approachable. Allowing for plenty of flavors from the oak, but not disrespecting the original Bristow flavors.

After your gin wins two gold medals in craft spirits competitions, what is the next step? For us, it was barrel-aging that same gin in second use American whiskey barrels. After months in the barrel, the gin picks up an attractive amber color and mellowed flavor with whiskey notes added to the gin. Interestingly, Federal law does not allow an ‘age statement’ on gin labels; they’ve begun enforcing this more vigorously recently. Therefore, we call this ‘aged’ version of our Euphrosine Gin #9 our ‘Barrel-Finished Reserve’ and make reference to ‘casking’ it in American oak whiskey barrels on the label.

This year’s reserve gin was conditioned in wet port casks from one of the top port-style wine producers in Napa Valley, California. Using freshly emptied wet port casks made from French oak from the Limousin forest results in a gin with a totally unique flavor, a wonderful rosered color and a silky-smooth mouth feel.

Our Treeline Gin with time spent aging in new charred American oak barrels. This spirit marries the flavor of our gin with the effects of oak aging to create a spirit of remarkable complexity. Treeline Barrel Rested Gin features mild juniper notes with lots of spice, vanilla and cinnamon. Is it a gin for whiskey lovers, a whiskey for gin lovers or something entirely new? Either way, Treeline Barrel Rested Gin is perfect served neat, on the rocks, or will make your tongue dance in a classic Negroni. Bottled at 45% ABV

We’re Scotland’s original single-site brewery and distillery. So with Oak Gin, we marry brewing and distilling. Oak beer barrels meet our distillery’s gin. And the result is a rich oak spice with notes of caramel, vanilla, and a touch of fudge. Warming, at 42% abv, with a long, rich finish.

They say anything worth having is worth waiting for. We distill our premium gin with a blend of seven botanicals, then let it rest in hand-charred French oak barrels. With an abundance of freshly drained Oregon Pinot noir barrels, it only makes sense to capitalize on the flavors locked within them. For this unique gin, we fill Pinot noir barrels with our Farmhouse Gin and let it rest for six months. The result is a complexly layered gin that tastes great on its own and mixed in cocktails. Modern Love Reserve Gin is a distinctive Modern American Gin creatively made with love and passion in beautiful Palm Springs, California. The majority of the eight infused botanicals are locally grown in our desert and throughout the Coachella Valley. Copper pot distilled, then rested in oak barrels once used for Napa Valley Pinot Noir to bring a welcome blush, softening and adding clarity to the undertone of Californian pink peppercorn, without losing this gin’s bold character. Its bright and distinctive finish holds well in modern creative cocktails or as a refreshing twist to the many timeless classics that reflect Palm Springs’ rich cocktail tradition.

We’ve been experimenting with ‘resting’ our Glorious Gin in oak barrels since 2011. Over that time we have produced 4 unique batches, each with a different oak treatment. Our original formula picks up notes of vanilla, baking spices, and a warmth from its time in oak. We will continue to tinker with our process until we find the perfect aging method.
