Barrel aged 4-6 months in new, charred American White Oak, Tom Cat is a completely unique gin with whiskey-like notes of oak, spice and a finish of juniper and raw honey. Tom Cat is the modern day adaption of 18th century England’s most revered spirit, Old Tom gin. After gin was outlawed by the Spirits Act of 1750, rebellious pub owners would hang a wooden plaque shaped like a black cat to inform the passerby of their defiance of the ban. Deposit a few pennies through the cat’s mouth and a bartender would pour a ration of Old Tom to be sipped through a tube between the cat’s paws.

Nearly every gin sold on the market today is bottled immediately after distilling, but Citadelle Réserve Vintage sleeps for several months in small, seasoned French oak barrels before being bottled. While this is very unusual today, this painstaking and lengthy practice is reminiscent of how gin was stored and transported more than 100 years ago when glass (too fragile and expensive), plastic and stainless steel were not options. Gabriel’s experimentation began in 2008 when he put his Citadelle Gin into a few old French oak casks – and voilà, Citadelle Gin Réserve was born and became the first barrel-aged Citadelle gin. It was a very rounded gin with notes of wood and vanilla while still being very juniper forward. It was such a new and unique gin that it sold out within weeks of its global introduction! Upon tasting Citadelle Réserve 2008, the Spanish press called Gabriel the “master of spirits.”

Just like days when you need a sweatshirt on the beach, we’ve added a layer of warm and comforting flavors to our original gin. The gin is barreled at full distillation strength (180 proof) for three months in three different kinds of twice-used barrels: Ex-bourbon Apple Brandy, Ex-bourbon Rum, Ex-bourbon Sea Salt. The results are blended and diluted to 101 proof and rested in stainless steel for six weeks before bottling. Without the heavy oak and char qualities of new barrels, the familiar botanical notes of Bimini Gin are enhanced rather than overshadowed. The citrusy notes of hops and grapefruit are intensified with hints of salinity. The juniper upfront mingles with tree fruit in the middle palate and then subsides into a lingering caramel and vanilla finish.

We’ve woven together thirteen Gin botanicals with 2 months and 28 days of oak aging in freshly emptied Waitsburg Bourbon casks. The result is a complex yet delicate spirit with layered aromas of warm baking spices, honey and herbaceous juniper. On the palate, soft maple sugar, toasted brioche and cream evolve into a vanilla finish. No sugar is added to this spirit, but a natural, pleasant sweetness comes from the mash of soft white organic Washington winter wheat. It is a nuanced, lyrical spirit with beautiful floral elements and a deep, rich wood influence.

Our Series 6 Gintrigue features our London Dry style gin which is aged 6-months in oak barrels which held bourbon (4 years) and cognac (7 years). Sweet juniper on the nose followed by complex bourbon, cognac and botanicals in the mid-palate with a return to sweet juniper on the finish. Perfect as a sipping gin, as a mule or as an Old Fashioned. Botanicals include juniper, coriander, angelica, cassia (cinnamon), orris root and more. We call this "Gintrigue," because of the gintriguing and ginsperational flavors!

This oaked gin starts life as Bainbridge Heritage Organic Doug Fir Gin, but undergoes a unique infusion process, resting on hard-toasted virgin American oak chips for at least 2 months. Unlike barrel-aged gins whose flavor characteristics can be muddled by the residuals of the barrel's former contents, the use of virgin toasted oak ads a warming hint of tannin and ads dimension and detail to the flavor of the freshly-cut Douglas fir boughs used to make this spirit. Golden straw color. Spicy, interesting aromas and flavors of egg nog, spiced meringue and fig-fennel pastry with a silky, bright, fruity medium-to-full body and a tingling, involved, long anise cookie, juniper, and lemon chutney finish. A delicious, spicy, flavor-packed barrel aged gin with lots of interesting cocktail possibilities.

Along with our Manifest Gin and Manifest Straight Rye, this spirit was one that we knew we were going to keep in regular rotation long before we ever opened our doors. Our founders' home bars had a regular rotation of barreled gin from a few American distillers, but there was a limited selection because it is somewhat of a new category in the spirit world. Like the category of gin, barreled gin gives craft distillers the ability to play with flavors to create a really unique variation without waiting 2 to 4+ years. Like blending any spirit, it is not a linear process. You can't just take a spirit, stick it in a previously used barrel and assume it's going to turn out great. We utilize a combination of oak styles in every batch. From Ex-Rye, new American oak, Ex-Bourbon and European oak. Each batch that we have developed includes blending different age gins from a variety of the cask styles. We invite you to taste each batch and let us know what you think.
