Mashed with southern select two row barley malt from our friends at Riverbend Malt House of Asheville, North Carolina along with a pinch of our favorite toasty and caramel malts. Fermented clean and crisp with our preferred house ale yeast until bone dry. Fermented again atop an ample helping of North Carolina sweet potatoes. Aged on a delicate blend of traditional pie spices which includes fresh local ginger courtesy of Bluebird Farms of Morganton, North Carolina.

Citrus is the name of the game with this effervescent American Wheat beer. We add 2 lbs of blood orange peels into every batch for a refreshing blast of orange character. You can’t go wrong with one of these in the hot North Carolina summer.

White Angel is patiently and painstakingly aged in 500L puncheons with 2 pounds per gallon of whole, North Carolina-grown Muscadine grapes. After maturation in these neutral oak vessels, this sour is re-fermented on an additional 2 pounds per gallon of Muscadines to impart a tannic grape character. A total of 4 pounds per gallon of fruit renders White Angel the absolute essence of wild grapes in a glass.

La Bonté is open fermented with our house Brettanomyces strains. The beer is then blended with a portion of Blonde Sour and onto a half pound per gallon of French Pears. Then we age the beer in bottles until it reaches perfection.

We take the purest Blue Ridge Mountain water and combine it with German yeast, Noble hops, and traditional pilsner malts to brew our perfect Pilsner. People's Porter is a robust English-style brew with a dark, ruby hue. Complex chocolate, caramel and toffee notes give way to an herbal bitterness, finishing with a pleasant hint of espresso.

Wheatseeker is a German-style Hefeweizen, fermented with a yeast strain used in Germany for hundreds of years. A light-bodied easy-drinker, with a wheat and yeast combination that creates a slightly spicy character. We hopped it with German grown Opal hops, which lends a slight citrus effect.

Crafting the ultimate comfort beer was a winter challenge we happily embraced. Our Milk and Cookies Stout is a cold weather classic, and this version cranks up the comfort through barrel aging. We entrusted our Imperial Milk Stout with Golden raisins, cinnamon, and vanilla into the warming embrace of Kentucky Bourbon barrels to carry us home for the holidays. Relax. Drink up. You’re home.

Sixty pounds of fresh Orange Blossom Honey was added to this Imperial Hefeweizen. After a month maturing in charred Kentucky bourbon barrels, her time has come to assume the throne. Terra Merita is an American Blonde Sour Ale aged in neutral wine barrels with 1/2 pound per gallon of apricots and zedoary. Zedoary, an ancient white-colored variant of turmeric that came to Europe 300 years before ginger and has almost disappeared in Western culture, enlivens this unique sour ale with earthy notes of mango and ginger spice. Our friends at Rayburn Farms in Barnardsville, NC provided the zedoary and the inspiration for this sour ale.

We longed for a true-to-style IPA that exuded confidence in its restraint, that paired well with any meal, and wouldn't destroy your palate.

We’ve rounded up some great malts and hops for Hoppy Ki Yay IPA, our year round IPA. This straw colored ale is hopped with Columbus and Amarillo and rounded out by a mild body from the malts.

Hoppy kettle sour pale ale

Despite George Washington calling it a “trifling place”, Charlotte evolved from a simple dirt crossroads into a leader of the new South. True to that spirit, Catawba has been evolving Carolinas’ craft brewing since 1999. This new creation, CLT India Pale Ale, offers up a modern, double dry-hopped, in-your-face explosion of tropical fruit and pine. And at 7.2% ABV, like today’s Queen City, don’t trifle with it! This big IPA has loads of ripe tropical and stone fruit notes from copious amounts of Simcoe, Citra, Amarillo,and Centennial hops. A light malt bill leaves this beer with a dry finish allowing the hops to stand out.

Before you lump this in with watered-down, mass-produced pilsners, give it a try. Brewed in the German lager tradition with a pilsner malt character, it’s spicy, slightly sweet, and grainy, with a moderate bitterness to the finish.

Our Wake Up Porter is an irreesistibly smooth brew with locally roasted coffee and fresh vanilla beans. We use Central Coffee Co.'s Sumatra Lingtong coffee and carefully chosen speciality malts to create a warm foundation and light body. Madagascar vanilla beans lend a subtle sweetness on the finish that you'll notice at the end of every velvety sip.
