At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

This collaboration with our friends at Cigar City Brewing in Tafmpa, FL is a funky IPA with miles of depth. During primary fermentation, we use two strains of Brettanomyces, both known for their fruity, tropical characteristics to complement the use of hos. The beer was then transferred into previously used oak barrels from Upland's Wood Shop to add a light acidity to the beer before aging on peaches and guavas. After going through another fermentation on the fruit, the beer was generously dry-hopped with Centennial, Citra, and Galaxy hops.

This relatively simple pale ale exemplifies the importance of yeast as a primary driver of flavor. This beer is fermented with 100% Brettanomyces and is meant to be an enjoyable session beer. It’s effervescent and light on the palate but provides a myriad of sensations from tart, to cider-like, to fruitiness all in one. Session Brett

Right out of primary fermentation this beer is decidedly an American Pale Ale, but as it enters secondary, a bridge to Belgium is built with a dose of Brettanomyces Bruxellensis. A 5 week maturation results in slightly dry, fruity beer with a hint of floral Brett character that will evolve over time.

Brewed as a pale ale and fermented in stainless steel with our house yeast. After primary fermentation, pediococcus and lactobacillus were added along with 3lbs of peaches per gallon (from Applecrest Farms in New Hampshire). Ten months later, the finished beer is bright amber in color with peach, graham cracker and green apple in the aromas. Drinking this medium bodied beer is like biting into a juicy peach with tartness throughout. The finish has a long lasting peachyness.

Hell Broth is a Danish Style American Wild Ale featuring cranberries, juniper berries and lemon blossom honey. It comes in with an ABV of 6.3% and 21 IBUs. The fruity ingredients give this wild ale a really great flavor from start to finish. Notes of the cranberries are very apparent and the honey adds a sweetness to the beer that pairs nicely with the natural sourness of the wild ale-style brewing.

Fermented and maturated in oak vats. No adding yeast. Spontaneous fermentation because of adding freshly pressed Barbera grapes juice that contains the skins, directly from a viticulturist near Alba. Brewed once a year at vintage time obviously. Available in 375 ml or 750 ml bottles. Fresh, vinous and fruity smell, qualities that are confirmed on the palate and which reveal a close link between the world of beer spontaneously fermented and the wine.
