At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

This beer is fermented with 100% Brettanomyces on the yeast front, which gives the typical "barnyard" tasting notes, tropical fruit, and a pleasant malty/nutty/cracker finish. After spending 7 months aging in white wine barrels, this year's Symphonic got the pear treatment. Loads of Bartlett pears went into the barrels for a secondary fruit fermentation, lending a cider-y edge to this distinctive beer. Next, this beer was bottle conditioned by leaving the wild yeast in the beer to feed on an added priming sugar, producing carbon dioxide in the process. The nose is pure pears with tropical softness, which compliments the tannic toasty oak flavors of this complex beer. Symphonic gets its name from the complexity of flavors and ingredients that create a harmonious flavor once combined, much like a symphony. We recommend enjoying Symphonic with your favorite classical music.

In 2018 we challenged ourselves to using an array of fruit new to our palettes and practices. When offered a high quality freshly picked Black Currant sample, we couldn’t resist. We present to you a metamorphosis for your senses. Using 12 to 36month aged Agrestic Ale as a base, to which we add 1.5lbs/gal Black Currants, the beer undergoes the final maturation in our French Oak “Fruiders” for an additional four months. A convergence of supple tannin and deep purple pigments, gooseberry jam, a mouth-watering acidity and earthy leather elicit notes of a beer having vinous roots. A new variant to one of the Barrelworks pioneers is born. Santé!

Hazy collaboration with our friends at Stillwater Artisanal Ales, it’s also the latest entry in their “Strains from Mother Nature” series. We blended together a blonde Brettanomyces-fermented ale aged in both oak barrels and foedres, then added California-grown blueberries and blackberries. After maturing, we dry-hopped the beer with reckless amounts of Citra, Mosaic, El Dorado, Simcoe, Galaxy, Nugget, and Sterling hops for a trippy, tropical-dank aroma.
