After the never ending battle between the hop heads and sour lovers we decided to appease the two. Using Nelson Sauvin from New Zealand and Citra from the Pacific North West this mixed fermentation brew is juicy, sour and extremely refreshing. Sour & hops in perfect, thirst quenching, melody!

At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

Lolita is a pink rose colored Belgian style pale ale fermented with wild yeast and aged on raspberries in wine barrels. Aromas of fresh raspberries, bright jammy fruit flavors and crisp, refreshing body make Lolita ideal for beer drinkers fond of Belgian Framboise. This beer is fermented with 100% Brettanomyces on the yeast front, which gives the typical "barnyard" tasting notes, tropical fruit, and a pleasant malty/nutty/cracker finish. After spending 7 months aging in white wine barrels, this year's Symphonic got the pear treatment. Loads of Bartlett pears went into the barrels for a secondary fruit fermentation, lending a cider-y edge to this distinctive beer. Next, this beer was bottle conditioned by leaving the wild yeast in the beer to feed on an added priming sugar, producing carbon dioxide in the process. The nose is pure pears with tropical softness, which compliments the tannic toasty oak flavors of this complex beer. Symphonic gets its name from the complexity of flavors and ingredients that create a harmonious flavor once combined, much like a symphony. We recommend enjoying Symphonic with your favorite classical music.

American Wild Ale

A.K.A. SALTED SUMAC SOUR Released April 2015 The tiny red drupes of the Longhorn Sumac are crushed to release flavors of lightly floral bright citrus often used to elevate a variety of drinks and foods. The vivid acidic notes of this uncommon spice combine with the Leipzig Gose (pronounced Gose-uh) sea-salted beer style to inspire this tart and savory golden ale. Unusually refreshing!

Our house lactic culture creates a tart, sour base, contrasted with an intense Citra and Galaxy dry hopping. The aroma showcases citrusy, fruity elements and the finish tastes of freshly squeezed grapefruit juice.

In 2018 we challenged ourselves to using an array of fruit new to our palettes and practices. When offered a high quality freshly picked Black Currant sample, we couldn’t resist. We present to you a metamorphosis for your senses. Using 12 to 36month aged Agrestic Ale as a base, to which we add 1.5lbs/gal Black Currants, the beer undergoes the final maturation in our French Oak “Fruiders” for an additional four months. A convergence of supple tannin and deep purple pigments, gooseberry jam, a mouth-watering acidity and earthy leather elicit notes of a beer having vinous roots. A new variant to one of the Barrelworks pioneers is born. Santé!

Silencio is a sour black ale artfully aged in Kentucky Bourbon Barrels. The addition of Madagascar Vanilla Beans and El Silencio Coffee from local Mountain Air Roasting culminates in a complex and elevated sour ale.

Bout That Life is a bright, champagne-like wild ale produced exclusively with twelve strains of brettanomyces and lovingly aged for two years in stainless steel. Full bodied and fruity, this complex farmhouse ale exhibits notes of barnyard, sweet hay, honey and lemon drop candies.

Brewed with wheat, corn and brettanomyces. This Sour is quick, dry and refreshing.

Rustique Saison brewed with Blueberries, and is the first beer to be released from our ‘Reservoir Dogs’ inspired series. This 7% Saison has a malt base of Rye, Wheat and Oats to deliver a spicy, fuller mouthfeel, hopped with Galaxy and Belma and then 500 kg blueberries per 1000 litre. This beer is complex and round with Belgian yeasty notes blended with the fresh blueberries that adds notes of nordic forest floors.

A legendary fruit from the breadbasket of civilization, the cherry has long been a companion of brewers. Kriek Mythology honors the sour cherry beers of the Flanders region of Belgium. We use whole cherries and puree, and age in barrels for up to a year.

Permeo is a blonde sour ale aged in neutral wine barrels. The combination of over one pound per gallon of whole passion fruit and lychee with our house sour culture pervades the palette with brilliant tropical fruit funk in this new world sour.

Inspired by the exuberance of the Romani Gypsy culture. Telegraph Gypsy Ale celebrates the restless and adventurous spirit in all of us. We brewed it with rye, unmalted wheat, and locally grown plums. Then we fermented it with Brettanomyces while listening to traditional Gypsy tunes. It’s wild, it’s unique, it’s delicious. So go ahead, stray from that well-trodden ground you are following, grab a bottle, and dance along a crooked path. Opa!

Hazy collaboration with our friends at Stillwater Artisanal Ales, it’s also the latest entry in their “Strains from Mother Nature” series. We blended together a blonde Brettanomyces-fermented ale aged in both oak barrels and foedres, then added California-grown blueberries and blackberries. After maturing, we dry-hopped the beer with reckless amounts of Citra, Mosaic, El Dorado, Simcoe, Galaxy, Nugget, and Sterling hops for a trippy, tropical-dank aroma.
