Garcon de Ferme is a foeder-rested, brettanomyces farmhouse ale. After fermentation, this pleasantly tart ale is blended back onto over a pound and a half per gallon of fresh, whole peaches to reflect and echo that the craft of the old has not been wasted on the young.

Japanese for “love tea,” Aicha (eye-chah) is a merging of traditions from the Old World and the Orient. Aicha is a barrel-aged American Sour Ale fermented with Green Tea, Toasted Oolong Tea, and Jasmine from our neighbors at Dobra Tea (Asheville, NC). This lovely, local collaboration is more than the sum of its worldwide parts.

This long-awaited iteration of Oblivion is fermented with double the amount of blackberries and dates typically found in our flagship sour red ale. Aged in flavorful Kentucky bourbon barrels this beer is then artfully blended to enhance the intense fruit and higher abv.

Mashed with local pilsner malt courtesy of Riverbend Malt House of Asheville, North Carolina along with a delicate touch of smoked wheat malt. Steeped on whole, Virginia old salts oysters. Fermented with our mixed house cultures in one of our beautiful Missouri oak foeders. Upon bottling, blended with OBX sea salt for increased complexity and quenchability. Incandescent is an American Sour Ale aged in neutral wine barrels with two pounds per gallon of fresh pineapples and jalapeños, smoked by our friends and neighbors at our favorite local BBQ restaurant. This pale gold sour ale pairs bright Brettanomyces notes with smoldering sweetness of pineapple and pleasant pop of jalapeños. Once this beer reaches its peak, we blend the wine barrels to attain the perfect resonance of our house sour culture with smoked pineapples and jalapeños.

For this collaboration beer, we cracked the juicy code without using any fruit. Is it hoppy? Of course. Smooth? Certainly. Refreshing? Always. Juicy? THE JUICIEST. Made with fruit? NO. ABSOLUTELY NOT. All the fruit flavor, all from the hops. This beer IS what it ISN’T.
