With Flyjack, Brewmaster Matt Brynildson and his team created what many thought impossible: a full-flavored hazy IPA that flies under 100 calories. In Matt’s words, “We wanted to prove that you don’t have to sacrifice flavor for calories.” The result is a remarkably drinkable hazy IPA that is crafted for adventure. Crisp and hazy, with hints of citrus and tropical fruit. A full-flavored Hazy IPA at just 4 carbs.

Union Jack is the IPA that helped blaze the trail for the revolutionary West Coast style. Named for the British Lion who co­founded our brewery, Union Jack is hopped to high hell yet eminently balanced from start to finish. This is a fad-proof IPA for any hop head. Pronounced pineapple, citrus and pine aromas with intense flavors of grapefruit and tangerine, all balanced by a hint of malt sweetness.

Nitro Merlin Milk Stout incorporates nitro gas for a smooth, creamy mouthfeel and milk sugar for a hint of sweet roundness. To create this beer, Brewmaster Matt “Merlin” Brynildson worked his magic to offer a true widget-free nitro experience straight from the can. Be sure to “master the surge pour” for maximum enjoyment. Ultra-smooth nitro mouthfeel. Dark, toasted malt flavors, a creamy texture and a touch of sweetness.

Straight from the R&D progam at Firestone Walker's Propagator pilot brewhouse comes Gen-1, a new-generation unfiltered IPA that is loaded with bold character and devilish drinkability. Gen-1 exhibits a style that bridges both the West and East coasts, with intense aromatics and flavors of peach, grapefruit and pineapple. Trial batches of draft Gen-1 generated high demand - and now it arrives in cans for the first time ever.

Our region is blessed with an abundance and variety of fresh fruit. South of Barrelworks in the hills surrounding the hamlet of Ojai, there are groves of citrus – oranges, lemons, grapefruit and tangerines. We’ve been lucky to work with the Ojai native Friends Ranchers who specialize in tangerines. Friends offered the W. Murcott Tangerine which we zested for aroma, juiced for flavor, and then fermented with our base beer of Bretta Weisseto create a metamorphosis. Brought to life was Bretta Tangerine! A bountiful bouquet of citrus mingles with pronounced herbal notes, leading to funky, yeasty, citrus flavors. Soft cereal and oak aromas are enveloped by a firm acidity and tartness and punctuated by zesty tangerine. The finish is dry and crisp; a thoroughly enjoyable beverage. Santé!

Chocolate, espresso and vanilla-bourbon aromas. Rich dark chocolate truffle, Bourbon and espresso create a smooth and incredibly drinkable barrel aged Oatmeal Stout.

Pivo is the beer that helped kick the doors down and liberate American pilsner from the clutches of industrial beer. Inspired by the dry-hopped Tipopils from Birrificio Italiano, Brewmaster Matt Brynildson drew upon multiple European influences to create this one-of-a-kind beer that sparked a legion of new craft pilsners across the U.S. Impeccably balanced. Floral aromatics, spicy herbal nuances and lemongrass notes from German Saphir hops.

Another offering from our “Bones” series, featuring the fermentation of fresh fruit. In this instance California white peaches from Sanger, CA are fermented with a brett’d saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction. Santé!

Continuing the tradition of Firestone Walker’s Black Friday “cocktail” releases, Old Man Hattan is a barrel-aged mashup of two classic drinks: the Old Fashioned and the Manhattan.

In a craft world dominated by hoppy beers, we went back to the basics with Firestone Lager. This may be our hardest beer to make, but it is our easiest one to drink. In the words of Brewmaster Matt Brynildson, “Firestone Lager is made for drinking, not thinking. It’s all about enjoying a good, clean beer.” Crisp and refreshing. A soft mouthfeel with bready malt notes and a whisper of German hop bitterness.

DBA—a.k.a. Double Barrel Ale—was the first beer ever brewed Adam Firestone and David Walker and it became instant sensation. Today, DBA is regarded as an iconic California craft beer, and as an enduring tribute to traditional cask-fermented English ales. Always malty, never bitter. A smooth mid palate with ribbons of caramel, English toffee and toasted oak.

With an infusion of dark coffee, a dash of cocoa nibs and touch of seasonal wizardry, our signature Velvet Merlin oatmeal stout has been transformed into Mocha Merlin - a roastry, chocolatry brew that will warm your soul on a chilly winter’s eve.

Fittingly, Agrestic Ale begins its journey as DBA; the foundational beer first offered when Firestone Walker opened its doors in 1996. Oak barrels along with our proprietary collection of microflora act like a chrysalis process, transforming DBA into Agrestic Ale over the course of several months. The result is a synergistic blend of beer matured in French and American oak with signature flavors and aromas: wood-derived toast, lemon pith, and rosewood swirl on the nose and palate, followed by an amazing harmony of vanilla, coconut and Earl Grey tea. Dark cherries, caramel malt and spice round out its complexity and drinkability. The finish is crisp with a mouthwatering acidity and chewy tannins. Santé!

What began as a birthday gift took on a life of its own. Proprietor David Walker cornered us one day and requested a sour cherry fermented beer for his 50th birthday. A handful was sold at a release and our customers demanded more. Behold Krieky Bones! This beer begins its life as a Flanders Red inspired beer aged over a year in French oak foeders. Sour Montmorency cherries are added and allowed a secondary fermentation. The aroma is of cherry pie complete with flavors of pie crust, spice and an underlying funk. Vienna malt notes give way to an assertive acidity and a bright carbonation. A santé!

In 2018 we challenged ourselves to using an array of fruit new to our palettes and practices. When offered a high quality freshly picked Black Currant sample, we couldn’t resist. We present to you a metamorphosis for your senses. Using 12 to 36month aged Agrestic Ale as a base, to which we add 1.5lbs/gal Black Currants, the beer undergoes the final maturation in our French Oak “Fruiders” for an additional four months. A convergence of supple tannin and deep purple pigments, gooseberry jam, a mouth-watering acidity and earthy leather elicit notes of a beer having vinous roots. A new variant to one of the Barrelworks pioneers is born. Santé!

Imagine yourself in Berlin’s Tiergarten enjoying this refreshing Berliner Weisse inspired beer on a warm summer’s day. Bretta Weisse honors the traditional beverage of the great Prussian capital, Berlin. Fredrick-the-Great was trained to brew it, and Napoleon’s troops called it “The champagne of the North”. Firm estery notes of stone and tropical fruit lead to Funky, yeasty, citrus aromas. Soft cereal and Oak flavors are enveloped by a firm acidity and tartness. The finish is dry and crisp; a thoroughly enjoyable beverage. At 4.9% ABV, one could imagine enjoying several Bretta Weisse’s in the Tiergarten, or anywhere else. This Berliner Weisse inspired Wheat beer was aged in 1700 gal French Oak horizontal foeders for 8 months.

We’ve patiently waited for two years to offer you this exquisite ale! Sour Opal retraces its roots to the lambic cellars of the town of Brussels and the Senne River valley, in Belgium. This American “Gueuze” represents a spectrum of flavors from a traditional barrel aged sour ale, complete with aromas of aged cheese and a distinct earthy mustiness that can only be found in a well cellared barrel aged sour. The complexity and balanced flavors of Sour Opal can be attributed first to the crisp assertive tannic acidity of the Viognier barrels. Oak-derived flavors and aromas mingle with guava, passion fruit, pineapple and tart cherry notes. This beer rounds out with a crisp clean and quenching acidity as well as a mild grape fruitiness that is intensified by a higher carbonation level.

Famed as one of the West Coast’s trailblazing imperial IPAs, our dearly departed Double Jack is back by popular demand. Massively hopped yet supremely balanced, Double Jack is a dangerously drinkable double IPA for any hop head. Bright grapefruit and tangerine American hop aromas, with flavors of stone fruit and pine. A malt backbone brings balance to the high hop intensity.

Easy Jack is back—and it’s easier than ever. Starting in 2019, Easy Jack is changing things up by dialing down the ABV. Now you get to enjoy the same hoppy goodness with even more drinkability.

Each vintage of Parabola showcases the power of our signature imperial stout aged for a full year in premium bourbon barrels. Parabola is a legend in the arena of barrel-aged stouts and is always one Firestone Walker’s most sought-after beers. Every fall, our local winemaker friends join us at the brewery for an annual rite: the blending of our next Anniversary Ale. This year's blend is XXII, signifying 22 years since the founding of our brewery in 1996. XXII is a blend of Stickee Monkee, Parabola and Bravo aged in bourbon barrels, along with Helldorado aged in gin and rum barrels. The result is a beer of extraordinary dimension, complexity and staying power, to be savored now and cellared for later.
