In this instance California white peaches from Sanger, CA are fermented with a brett’d saison that has been maturing four months in French oak barrels. The synergy between fresh peach, wild microflora and oak components create a bright white peach flavor mingling with spicy yeast and oak aromas. Soft acidity and a firm carbonation lend “pop” to the overall sensory experience. It took four separate fermentations to create this concoction. Santé!

Fittingly, Agrestic Ale begins its journey as DBA; the foundational beer first offered when Firestone Walker opened its doors in 1996. Oak barrels along with our proprietary collection of microflora act like a chrysalis process, transforming DBA into Agrestic Ale over the course of several months. The result is a synergistic blend of beer matured in French and American oak with signature flavors and aromas: wood-derived toast, lemon pith, and rosewood swirl on the nose and palate, followed by an amazing harmony of vanilla, coconut and Earl Grey tea. What began as a birthday gift took on a life of its own. Proprietor David Walker cornered us one day and requested a sour cherry fermented beer for his 50th birthday. A handful was sold at a release and our customers demanded more. Behold Krieky Bones! This beer begins its life as a Flanders Red inspired beer aged over a year in French oak foeders. Sour Montmorency cherries are added and allowed a secondary fermentation. The aroma is of cherry pie complete with flavors of pie crust, spice and an underlying funk. Vienna malt notes give way to an assertive acidity and a bright carbonation. A santé!

In 2018 we challenged ourselves to using an array of fruit new to our palettes and practices. When offered a high quality freshly picked Black Currant sample, we couldn’t resist. We present to you a metamorphosis for your senses. Using 12 to 36month aged Agrestic Ale as a base, to which we add 1.5lbs/gal Black Currants, the beer undergoes the final maturation in our French Oak “Fruiders” for an additional four months. A convergence of supple tannin and deep purple pigments, gooseberry jam, a mouth-watering acidity and earthy leather elicit notes of a beer having vinous roots. A new variant to one of the Barrelworks pioneers is born. Santé!

Imagine yourself in Berlin’s Tiergarten enjoying this refreshing Berliner Weisse inspired beer on a warm summer’s day. Bretta Weisse honors the traditional beverage of the great Prussian capital, Berlin. Fredrick-the-Great was trained to brew it, and Napoleon’s troops called it “The champagne of the North”. Firm estery notes of stone and tropical fruit lead to Funky, yeasty, citrus aromas. Soft cereal and Oak flavors are enveloped by a firm acidity and tartness. The finish is dry and crisp; a thoroughly enjoyable beverage. At 4.9% ABV, one could imagine enjoying several Bretta Weisse’s in the Tiergarten, or anywhere else. This Berliner Weisse inspired Wheat beer was aged in 1700 gal French Oak horizontal foeders for 8 months.
