First brewed back in 2004, Curieux was our initial foray into barrel aging. To make Curieux, we take our Tripel and let it age in bourbon barrels for seven weeks. Once that time is up, we take the beer out of our cold cellars and blend it back with a portion of fresh Tripel. The resulting rich, golden ale features smooth notes of coconut, vanilla, and a hint of bourbon.

We sought out the very best ingredients, sourcing wild honey from the African Bronze Honey Company, a member of the Fair Trade Federation and a certified B-Corp. The Seville orange peel is freshly ground. In the end, we created a big, sweet and citrusy Belgian-style Tripel with thoughtfully sourced ingredients.

Chimay Tripel (named Cinq Cents in 750 ml bottles), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Tripel Karmeliet is a very refined and complex golden-to-bronze brew with a fantastic creamy head. These characteristics derive not only from the grains used but also from restrained hopping with Styrians and the fruity nature (banana and vanilla) of the house yeast. Aroma has hints of vanilla mixed with citrus aromas. Tripel Karmeliet has not only the lightness and freshness of wheat, but also the creaminess of oats together with a spicy lemony almost quinine dryness.

Brewing up a pumpkin collaboration beer should be a piece of cake for Dick Cantwell, the pumpkin king at Elysian Brewing and a slam dunk for Shaun O’Sullivan, the 21st Amendment Brewery Brewmaster who brought the world Hell or High Watermelon Wheat Beer. In truth, brewing upHe Saidwasn’t that hard. What proved to be more difficult was getting their story about its inception straight.
