First brewed back in 2004, Curieux was our initial foray into barrel aging. To make Curieux, we take our Tripel and let it age in bourbon barrels for seven weeks. Once that time is up, we take the beer out of our cold cellars and blend it back with a portion of fresh Tripel. The resulting rich, golden ale features smooth notes of coconut, vanilla, and a hint of bourbon.

We sought out the very best ingredients, sourcing wild honey from the African Bronze Honey Company, a member of the Fair Trade Federation and a certified B-Corp. The Seville orange peel is freshly ground. In the end, we created a big, sweet and citrusy Belgian-style Tripel with thoughtfully sourced ingredients.

Chimay Tripel (named Cinq Cents in 750 ml bottles), with its typical golden colour, its slightly hazy appearance and its fine head is especially characterised by its aroma which results from an agreeable combination of fresh hops and yeast. The beer’s flavour, as sensed in the mouth, comes from the smell of hops: above all it is the fruity notes of muscat and raisins that give this beer a particularly attractive aroma. The aroma complements the touch of bitterness. There is no acidity, but an after-bitterness which melts in the mouth. This top fermented Trappist beer, refermented in the bottle, is not pasteurised.

Tripel Karmeliet is a very refined and complex golden-to-bronze brew with a fantastic creamy head. These characteristics derive not only from the grains used but also from restrained hopping with Styrians and the fruity nature (banana and vanilla) of the house yeast. Aroma has hints of vanilla mixed with citrus aromas. Tripel Karmeliet has not only the lightness and freshness of wheat, but also the creaminess of oats together with a spicy lemony almost quinine dryness.

In case you’re one of the 3 people that haven’t figured it out yet, we at Iron Fist are fans of everything unfettered by any silly notions of “tradition”. So our latest insurrection is a two-for. We brewed a huge Belgian style Trippel and hopped the (expletive deleted) out of it. Being the counterculturalists that we are, we decisively chose to use the finest imported European hops we could get our hands on rather than the ubiquitous West Coast style varieties. We even threw in some varieties so new they still have that new hop smell. A robust malt character helps balance this truly one-of-a-kind brew.

This collaborative beer from De Proef and Cigar City definitely veers a fair distance from an ordinary Belgian tripel, finding its conceptual kernel as a “peaches-and-cream tripel.” While brewed with Belgian candi sugar and a traditional Trappist yeast strain, the recipe also adds a dose of lactose for additional mouthfeel (the “cream”) and finishes up with dried peaches. A Brux III strain of Brettanomyces and assertive hop additions add to the tropical angle, while further contributions of toasted coconut and medium toasted oak appear as well. Actually, it may make sense to just forget we said anything about this as being a tripel in the first place

Cocodrie is Cajun French for alligator, and this Belgian style ale is stuffed with enough hops to stand up to a sauce-piquant prepared with one. We recklessly crammed IPA-worthy additions of hops (six separate hop additions, plus dry hopping) into an elegant and tastefully brewed Tripel – the spice and fruit flavors from the yeasts mix with the sumptuous hop flavors to create a rich, yet dangerously drinkable IPA. Our interpretation of the celebrated Tripel IPA style of beer is crafted with a generous amount of Pilsner malt which insures this ale clocks in at just over 8 percent ABV. Our brewmaster, Gar Hatcher selected strains of French and Belgian yeasts for their complementary fruit and spice flavors which meld with the multiple additions of elegant European hops. Cocodrie is then dry-hopped with French and Styrian hops which provides this beer its fruity, citrus, herbal and spicy hop aroma. Available July to December.
