Grand Teton Brewing’s second release in their Brewers’ Series in bottles is a Dry Hopped Brett Saison aged in wine barrels. Starting with a Saison using traditional malts and hops, the brewers then pitched a simple yet complex strain of yeast: Brettanomyces Drei (Brett). After the beer fermented to a low gravity resulting in a crisp, clean and dry beer, Grand Teton brewers transferred it to wine barrels where it aged for nine months. A few weeks before packaging, a blend of hops at a rate of 5 pounds per wooden barrel was added. The live Brett in this beer, as well as the generous amounts of unique and flavorful hops, makes this a great beer to drink fresh. It may also be cellared to further develop for years to come.

This eight-percent farmhouse ale tastes like it was just air-dropped from Belgium, but it's actually from a two-year old brewery in Pawtucket. The brewers at Foolproof use a complex grain bill with barley, wheat, rye, oats, and spelt. And while we can't tell you what exactly the spelt flavor is, it works. A bright spice from the yeast and rich malt flavor are set off by biting herbal hops in this fantastic saison.

Brian O’Reilly of Sly Fox Brewing Company joins Dirk Naudts to create the fifth brew in the De Proef Brewmaster’s Collaboration series. This year’s collaboration celebrates the great brewing cultures of both Philadelphia and Gent. Broederlijke Liefde (Brotherly Love) is a slightly higher gravity interpretation of the saison style. It is fermented with two yeasts – a classic saison yeast as well as brettanomyces from an original gravity of 1066 (16.5 plato). These yeasts yield a dry and slightly spicy ale with a strong hint of farmhouse character that will continue to develop with age. The use of Target and Styrian Golding hops at 37 IBUs add floral aromatics and a balancing bitterness. Broederlijke Liefde if the official Belgian collaboration ale of Philly Beer Week 2011. This release in our series of seasonal saisons is a refreshingly hoppy take on saison for springtime. Mary of the Gael has a simple base of pilsener malt, a touch of honey malt and is dry-hopped with a copious amount of floral hops.
