Henry duYore’s Rye Whiskey opens with heady cereal notes of pine sap, celery root, and sweet rye loaf, set off by warm accents of malted barley. Distillery Notes “Henry DuYore’s Rye Whiskey speaks to our aspiration to release spirits that balance the character of their grains of origin with the influence of the years passed in oak barrels. An abiding fondness for the flavor of rye inspired us to produce our own bottling. With this Rye Whiskey, we sought to temper the admirable innate feistiness of rye with the rich, supple flavor of malted barley. Rye proved to be a worthy adversary for the old-fashioned Ransom mashing system, which we originally designed for the more cooperative malted barley. The texture of the rye grain made it impossible to push our house-mashed base wort above fifty percent rye, so we selected a well-made rye white dog to bring the rye to the forefront of our blend. We feel that the resulting whiskey retains the texture, aromatics, and flavor of an artisan pot distilled spirit. We are proud to offer up this whiskey as a fitting tribute to the legendary old moonshiner Henry DuYore. Although he is now completely reformed, Henry’s true identity cannot be revealed. Unlike most spirits, vodka gets its flavor entirely from its primary ingredients, whether that be potatoes, grains or even gimmicky things like apples or grapes. For the distiller and connoisseur, the challenge is finding the right ingredients and using them in the right proportions. To that end, we tried scores of combinations and, in the end, landed on a mixture of spelt and triticale. (Spelt is a strain of wheat that imparts nutty sweetness. Triticale is a centuries-old hybrid of wheat and rye, bringing smooth creaminess.) Equally important to our process is the fact that we distill artfully – not over-distilling. Once for purity, twice for smoothness. That’s it. The result is a vodka that’s unlike any you’ve had before, and any that’s on the market today.

How would the ancient Greeks have made their ouzo? Certainly not with lots of sugar. This spirit reinvents an ouzo from a pinot gris grappa that is redistilled with green Moroccan anise and other spices to create a dry and complex after dinner aperitif.

Our complex distillation and filtering processes highlight all the nuances of this smooth taste which is backlit by a sophisticated finish. Just as all great artists know, beauty in its natural state is always alluring.

The first absinthe produced in Brooklyn (officially December 2013). After experimenting for a few years in the basement, Doc's moved to the old Brooklyn Pfizer Building. Everything starts from scratch. The process begins by fermenting Spelt and Malted Barley and then running the wart through a small column still. Everything (heads, hearts, and tails) is kept for the first maceration; using 10 botanicals for 1 week in the raw distillate. These include wormwood and grand wormwood along with lemon balm, fennel, anise, lemon peel, licorice root, hyssop, peppermint, and standard mint. Following the first maceration the raw distillate goes through a separate pot still and comes out around 97%abv. By using only the hearts from this run a much cleaner, richer spirit is achieved. This raw spirit then sees a second maceration (giving it not only flavor, but color as well), which includes 5 dry botanicals and one fresh (mint), for 2-5days, before being diluted to proof (66%abv) with New York City tap water. While many absinthes can be overpowered by anise, in Doc’s Absinthe you will find less anise notes, and therefore less of a louche (that milky cloudiness familiar to most absinthes with the addition of ice), but more herbal notes of wormwood. Absolutely incredible and a great addition to the New York distilling scene!

Fresh Oregon and Washington sweet cherries are crushed, fermented, and distilled into clear, powerful Kirschwasser (cherry Schnapps) in the traditional German fashion. The flavor and great vanilla/almond “nose” come only from the cherries, as does the alcohol. As in all other Clear Creek products no colors, flavors, or sugars are added. Whipper Snapper is a pot distilled, handcrafted spirit made for those who appreciate quality, flavorful whiskey. It is created by combining the best production methods for bourbon, scotch, Irish whiskey, and Dutch corenwyn, so it doesn't quite fit into any particular category. Although the mash bill is most similar to bourbon, it is quite heavy on malted barley, and aromatically is more similar to an Irish whiskey. The first component of Whipper Snapper is made from barley that is malted in the Pacific Northwest, and unmalted barely grown in the Willamette Valley of Oregon. The barely is ground, mashed, fermented, and distilled on location at the Ransom Distillery in Sheridan, Oregon. The second part is created by using a base of Kentucky corn whitedog, which is re-distilled in an alembic pot still. These concoctions are then aged in a variety of barrels, included used French coopered Pinot Noir barrels, new American coopered whiskey barrels, and used American whiskey barrels. For each bottling, eight barrels are specifically selected to make the best possible blend. The Whipper Snapper is then aged for about one year, and the final product is hand bottled, hand labeled, and hand waxed.
