Switchback Ale was developed as a flavor concept, not adhering to any style guidelines. Using only traditional ingredients, Switchback Ale is an unfiltered, reddish-amber ale which is particularly well-balanced, allowing for complexity of flavor coupled with an unusually smooth and refreshing character. Five different malts, select hop varieties, and our own specially cultivated yeast create an ale which leads with hop fl¬avors and a subtle impression of fruit (our yeast’s contribution), followed by a palate pleasing malty finish.

Uncanny Valley is an IPA hopped with Vic Secret and Citra hops. The bold new hop variety's have a high oil content for a huge flavor impact of Ripe Mango, Pine Needles, Watermelon, and Stone fruit. The hop flavors wash over a balanced malt bill to hold up the bold hops.

Our session IPA is so tasty and quaffable that it will leave you craving more! Super Session #4 features full malt flavor and assertive hop character with copious additions of Centennial hops late in the kettle and dry hopping.

Every once in a while you know you stumble upon something glorious. That something just so happens to be our Private Reserve Pumpkin. We have combined our signature taste with a refreshing pumpkin finish. Limited to just two and half hours on the production line this is a true connoisseur's cider.

Our brewers developed this recipe for more than a year; playing around with yeast strains and hop combinations in search of a smooth, juicy offering that pleases palates. With VT IPA they found the perfect balance of tropical fruit and citrus flavors through a heavy dry-hopping of Citra and Amarillo hops, which give distinct tangerine, mango, pineapple and grapefruit character. The juicy hop profile is complemented by the grist, which features a heavy hand of flaked oats and aromatic Munich malt to deliver a smooth mouthfeel and hazy appearance. What sets this beer apart --aside from the soft bitterness-- is the introduction of a new yeast strain that provides the beer with more neutral notes and juicy esters that enhance the hops. This monster of an India Pale Ale will make you pucker up! Loaded with high-alpha US grown Summit, Amarillo, Centennial and Cascadian hops. A brawny, dry hopped ale is wicked strong and will terrorize your taste buds, but has enough malt backbone to balance the intense bitterness.

Brewed with maple syrup and cold brew coffee, this wonderfully complex stout starts with a rich smooth coffee flavor, then eludes to a dark chocolate character, and finishes a hit of sweetness.

At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

Gin Barrel Saison is the result of working with distillers around Vermont to reuse barrels from some of the best spirits around Our inaugural batch features barrels from Caledonia Spirits in Hardwick, VT that were used to age their Tom Cat gin. Batch two highlights the botanical flavors of Stonecutter Spirits in Middlebury, VT. Our saison picks up smooth vanilla notes from the American oak, and herbal characters of ginger, honey, and juniper from the gin. The result is a bone-dry, easy drinking beer that we are extremely proud of. Look for future releases featuring other local spirit barrels as well!

Our Raspberry Vermonter Weiss is a sour wheat beer brewed with Vermont malt and hops and a helping of fresh local raspberries along with raspberry puree to impart a bright fruit flavor and a huge aroma of fresh raspberries in every sip of this beautiful deep pink beer.

Peasant King is an Imperial IPA brewed with Kohatu, Zythos, and Cascade. The blend of hops provide a range of flavors and aromas; papaya, clementine, and honeydew melon. The hops sit atop a royal grain bill of Weyermann Barke™ Pilsner and Vienna malts for a complex assortment of lightly toasted flavors.
