Harvested at the pinnacle of Canada’s crisp winter, the grapes are naturally frozen on the vine and picked when the temperature drops to -10 degrees C. Only a few drops of luscious nectar can be squeezed from each bunch, which is then expertly guided through fermentation to achieve this rich and alluring specialty wine. This Niagara River appellation wine opens with characteristics of strawberry, raspberry and rhubarb dominate the nose while the palate shows a robust concentration of red fruits as well, all of which complemented by a well-balanced acidity. Pairs well with salted dark chocolate, chocolate mousse with fresh berries, strawberry rhubarb pie and porcini dusted rib eye. Serve chilled.

This unique Canadian product was harvested at the height of Canada’s crisp winter. Naturally frozen on the vine and then picked when the temperature drops to a frigid -10ºC. Only a small amount of concentrated nectar can be squeezed from each bunch. The juice is then slowly fermented at an average temperature of 15ºC to achieve a rich, specialty wine know as Icewine. Aromatics of tropical fruit including mango and orange dominate, on the palate fruit flavours including peach, nectarine and lemon are balanced by crisp, lively acidity.

Neige (which means snow) is made from apples harvested in the fall and pressed at Christmas time. Their juice is then kept outside in the freezing winter cold, in order to naturally separate the sugar from the water through the process known as cryo-concentration. This is the way we then obtain our precious syrup, which we let slowly ferment over a period of 6 to 7 months. The color is a golden yellow with light reflections. On the nose it is pure and clean, the aroma of freshly-picked ripe apple with striking intensity. On the palate it's a crisp, flavorful attack. A perfect balance of sugar and acidity. Perfect as an aperitif or to accompany sharp cheese (Cheddar or goat) or veined cheese (blue), and desserts. Serve chilled.

Geography: The vineyard, located in the Jura, is 80km long and 7km wide, with grapes planted at an average altitude of 300 meters. The vineyard spans from Champagne-Sur-Loue to Saint-Jean-d’Etreux, between the plain of Bressane and the foothills of the Jurassian plateau. It is located on the West-facing slopes of the Jura Mountain. We call this region the “Revermont” or “Bon-Pays.” Occasionally we source from additional vineyard sources outside of the Jura. Soil: The soils are made up of limestone boulders coated with brown clays or clay with cherts from some of the original limestone boulders. The vineyard’s subsoil primarily consists of marl (iridescent red marl and green from Tria, gray marl from Lias). Vinification: Méthode Champenoise with fermentation at a very low temperature to preserve the aromas. Matured 9 months on the lees after second fermentation. Color: Pale gold with a hint of green. Fine bubbles. Bouquet: Intense aromas of white flowers and citrus fruit. Palate: Creamy and smooth with lingering aromas and a distinctive sweet, fruity flavor. Wine & Dine: Great as an aperitif with a few mint leaves or red berries or paired with desserts like a fresh berry tart, a soft cheese plate, or fruit salad.

They were then pressed while frozen yielding a small amount of juice at 35% sugar. The juice was then slowly fermented at a cool temperature to retain the full complexity of flavors.
