We love rum- particularly aged rum from the Caribbean. The warm, humid weather provides an ideal climate for the naturally sweet rum distillate to mature in used bourbon barrels- something hard to emulate in North America. We worked for more than a year with master rum blenders to develop a ‘whiskey drinker’s rum’: slightly drier and less sweet than typical Caribbean rums, but nicely mellow after 7 years in the used bourbon cask. It’s full, rich flavor has notes of vanilla and butterscotch which are wholly derived from the sugarcane and barrel. Easy to drink neat or on ice, it works perfectly in your favorite rum or whiskey cocktail!

Our Navy Strength Aged Caribbean Rum is made from the same rum used in our standard Aged Caribbean Rum, but being a couple of former Navy guys, we wanted something with a little more horsepower. At traditional ‘navy strength’ (114 proof), this rum has strong natural notes of vanilla and butterscotch with a much warmer finish. It’s perfect over a large ice cube or in a cocktail. Enjoy!

The origins of Rye whiskey date back to colonial Pennsylvania. Early European settlers brought with them the tradition of distilling and as farmers of Rye they quickly made the region famous for its fine Rye whiskey. They also brought with them a set of Old World traditions that evolved in the New World into a form of Folk Magic known as "Pow-wow" (from the native Algonquin term for "gathering"). One common Pow-wow practice involved making various types of herbal recipes. Inspired by an old Pow-wow recipe for infusing Rye whiskey with herbs & spices, we have taken a fine Rye whiskey matured in new, charred oak barrels, and carefully infused it in tiny batches, over an extended period of time, with Saffron (also grown by early settlers), Orange Peel, and other whole botanicals. No extracts or artificial colors are added. Pow-wow is slowly handcrafted with the finest ingredients to create unique, botanical layers of complexity not found in any other whiskey. Pow-wow Botanical Rye can be enjoyed like any fine whiskey: neat, on the rocks or in a variety of cocktails.

Proudly distilling Baltimore City’s first gin since prohibition. Not piney, like a London Dry gin, our gin is floral and sweet, with jasmine flower on the nose and citrus on the pallet. Our unique bitters profile really sets the finish apart and rounds out this gin. Bottled on the strong-side at 100 percent proof, this gin stands up beautifully to dilution in cocktails. Barreled Shot Tower Gin spends 9 months developing in used Epoch Rye barrels. The curaçao orange interacts with the barrel’s acidity, resulting in notes of candied lemons. Vanilla, caramel, and oak are given from the charred barrel, and a little Rye spice from the whiskey. Bottled at 100 proof.

Each year, we set aside a small amount of our Aged Caribbean Rum for a final finishing in our American Single Malt Whiskey barrels. This added step further mellows the rum while beautifully accentuating its existing rich flavor.

The Melvale Distillery, maker of Melvale Rye Whiskey, was located in the Jones Falls section of Baltimore by John T. Cummings in the 1880s. One of the original buildings remains intact, although the site no longer distills alcohol. Melvale Pure Rye was one of the most premium of the pre-prohibition Maryland Ryes. In its day, the Melvale brand became one of the most prestigious and respected of Maryland’s rye whiskeys. Our Melvale Straight Rye’s mash bill is 51% rye and 49% malted barley to capture the bright and grassy flavor and softer finish of the old Maryland rye brands. It’s aged three years in new American oak barrels and hand bottled at 90 proof. This medium body spirit is true to its roots, with a great balance between the initial sweetness, muted rye spiciness and oak influence both on the nose and in the initial sip. It starts with honey and vanilla notes but finishes with a softened note of rye spice and a taste of cinnamon, pepper, and sweet honey.
