This barrel finished expression of our Skadi Aquavit spends time in 200 liter, tight-grained Minnesota oak barrels, lending a pale straw hue. Aromas of toasted oak and cracked cinnamon stick are found. The palate features candied orange peel, late season honey, and an air of peppermint. Savory spice on the finish.

The earliest mention of "aquavit" was in a letter written by Danish Lord Eske Bille in the 1500s. Danish aquavits are made from un-aged, grain-based spirit and are typically the most caraway-forward style of aquavit. Our Danish-Style aquavit features the finest caraway from Finland as its lead flavor. The caraway is rounded out by several other botanicals from around the world including Icelandic angelica root and birch bark. It is a subtly spicy yet balanced spirit that's perfect in savory cocktail experiments.

”Älskar” means Love. Southern-Swedish Aquavit in the style of Skane or Hallands Flader, this citron flavored aquavit is nuanced with notes of caraway, coriander, grains of paradise and other spices. For oyster and mussel pairing.

We chose the name Fylleangst for our aquavit as a playful nod to Scandinavian drinking culture. A word with no true english interpretation, Fylleangst refers to the feeling of concern brought about by reflecting on one’s behavior after a night of heavy drinking. Distilled from a base of wheat and malted rice, we spent the better part of a year developing what we consider to be a uniquely west coast interpretation of this classic Scandinavian staple. Aquavit is our favorite savory spirit. Fylleangst is vapor distilled with toasted caraway, coriander, cumin, anise, fenugreek, summer savory, and lemongrass (to name a few). Like all of our spirits it is carefully made to stand out when enjoyed neat while also carrying enough flavor with it to be mixed in cocktails. As a real Scandinavian might exclaim, our Aquavit may be the finest. And in fact, judges at the 2020 San Francisco World Spirits Competition recognized Fylleangst as Best in Class with a Double Gold medal.

Inspired during a visit to Norway, We embarked on making an Aquavit reminiscent of the traditions of Norway with our California expression. Our beautiful aquavit went on vacation in late harvest wine barrels we sourced from Napa, California. This batch of barrel vacationed of Aquavit vacationed for 22 months. It is full of baking spice, dill, golden honey and Awesome.

Loonman Aquavit is a wheat and barley-based dill & caraway aquavit. The botanicals are infused through maceration prior to distillation as well as vapor infused.
