All Simcoe Post-Skate IPA

It might sound like an echo, but it’s not. This collaboration with Stillwater Artisanal explores the true depth of Mango flavor. Three layers of taste and aroma from fruit and hops. Go Mango!

The wort of this beer looks radio active. Pale, wheaty and green tinted from a pos boil hop burst. After a short and efficient fermentation we dry-hop it as many times as it takes and carbonate it softly. We love brewing beer, thinking about beer, dreaming about beer, talking about beer, breathing beer, changing beer, exchanging beer etc. Chill it perfectly and crush it deductively

Tropic Punch Ale is a joint effort with nomadic brewer Brian Strumke of Stillwater Artisanal. We brewed this sour ale with lactobacillus and let it ferment with plentiful Mango, Passion fruit and Peach. Sweet from Sweden!

Bridge Road Brewers together with gypsy brewer Mikkel Borg Bjergsø of Mikkeller created a one off brew one Friday evening of March 2012. The result is The Dark Harvest. Inspired by the timing of the collaboration, it was decided to make a dark beer, using locally grown fresh hops. Of several research hops being grown at Rostrevor Hop Garden, one variety stood out for selection and was harvested just hours before being added to this beer.

One of Michael Jackson’s 500 Classic Brews. Carnegie Porter was brewed for the first time in 1836 and tastes the same today as it did then. Carnegie Porter has a creamy head with a scent of coffee. Its sweet and wellrounded flavor is balanced by the bitterness of the hops. Storage helps the flavor mature and enhances its harmony.

A fruity, tart and elegant ale with brettanomyces yeast. Loads of raspberries and rhubarb are added during the secondary fermentation.

IPA brewed with marshmallows, graham crackers, salt and lactose sugar with mangos and vanilla added

Omnipollo Fatamorgana (8%). Drawing inspiration from the fidelity of a saison - rustic, alluringly cloudy and crisp - this double IPA was brewed using oats and wheat. Dry-hopped twice and completely untouched post fermentation to preserve aroma and flavor.

Invited to brew in the US I wanted to use local ingredients. Agamemnon is an Imperial Stout brewed with maple syrup. Boiled 7 hours.

This beer is a collaborative effort together with our good friends – and world class brewers – at Buxton Brewery (UK). Yellow Belly — a person who is without courage, fortitude, or nerve; a coward. To us, one of the most cowardly deeds is to act anonymously, hiding behind a group. A signifying trait of institutionalised racism. This beer is brewed to celebrate all things new, open minded and progressive. A peanut butter biscuit stout with no biscuits, butter or nuts. Taste, enjoy, and don’t be prejudiced. Brewed with aromas.

Inspirations for our beers come from everywhere. Sometimes it’s like the universe is telling us there needs to be a beer. It sounds pretentious and, in a way, it is… But with the release of this Omnipollo® German style pilsner we are in the center of a vortex of incidences telling us that all we want to drink is a truly well-crafted pilsner. My own pilsner journey started long ago, and pilsner is still my favorite style of beer, but it totally seems like the right time to celebrate this style. The signs are there. Like when your favorite rapper doesn’t enjoy the IPA you had planned to brew in his honor, saying “none of that fruity stuff”. Or the fact that for the last couple of years, all brewers at festivals will not be found drinking the latest hype brew, but instead gathering at the tap of whoever brought a classic pilsner. A pils is sort of like your favorite t-shirt, you wear it often, but it is never a loud statement. So we raise our (pilsner) glass to you, and hope you will enjoy Devins German style pilsner and the rest of our pilsner journey. Be curious, be classic.

Smooth is one of a kind but yet part of a duo. A single imperial stout that we let rest on two different types of Swedish High Coast Whisky oak barrels. A few of the barrels were peaty and the others, you guessed it, smooth. One of the ways we like it. Skål!

In my mind there are only two beverages that live up to life-long drinkability; one is water and the other is milk. Swedes drink more milk per capita than any other nation in the world so I chose milk for my inspiration. Henok Fentie (Head Brewer, Omnipollo)
