At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

Originally brewed as a conceptualization from our friends at the Nachbar....This historical anomaly is one of the only styles of beer indigenous to the USA and it was originally brewed right here in the Bluegrass! Much like our more beloved and covet cousin sour mash bourbon, this ale is brewed in the manner of ’souring the mash’. First we start with a blend of grains similar to your favorite spirit, barley, rye, and corn and we start the sour mash. In that process, we are able to achieve a deliciously complex tart flavor that plays with the spiciness of rye, while finishing with a dry crispness from the corn. Moderately hopped to balance the sweetness of this Kentucky Common, one will get notes of dry fruit, sweet tarts, and hints of tannin from a very small amount of barrel aged character.

Hoppy, hazy, and assertively tart. Vacay finds us in our classic dry hopped sour mode — possibly our favorite kind of beer to brew and drink. We decided to take a vacation from the American hop varietals we use frequently, and instead assemble a blend of exciting, fruit-forward neo-German and New Zealand flavors including Huell Melon, Hallertau Blanc, and Southern Cross. Notes of lemongrass, apricot, mandarin, orange flower, black peppercorn. A juicy, puckering refresher with lightly toasted white oak in the background. This beer has never been boiled.

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold. The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer. This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.

We wanted to make sure our first anniversary beer was a special one, so we cranked up some Beatles tunes and got to work brewing. The result was a barrel-fermented wild farmhouse ale aged on whole raspberries. Raspberry Fields spent five months slumbering in French oak barrels with a wild Saccharomyces yeast strain, which gave the beer balanced flavors of lemon, hay, and a touch of tartness. The beer’s rest on raspberries gave it a prominent fruity profile, while its time in oak barrels smoothed out the finish with a touch of vanilla. This is a special beer, for a special first year of our business, and we couldn’t be happier to share it with you. Tasting Notes: Dry, Raspberry, Lemon

The taste as the same nice dry raspberry with some cooked corn qualities from the brett and some dry pale malt underneath. The flavor has a herbal dryness maybe coriander in the finish.
