Guinness Draught Stout is the original nitrogen-infused beer. Although to the uninitiated, it can look dark and heavy, it actually tastes deliciously light and smooth, swirling with notes of roasted barley, caramel, coffee and chocolate. The net result is a flavorful stout that’s as approachable as a lager — which it has long been one of the world’s great pub beers. Brewed in honor of the 1000th batch at our original Clybourn brewpub. A liquid as dark and dense as a black hole with thick foam the color of a bourbon barrel. The nose is an intense mix of charred oak, chocolate, vanilla, caramel and smoke. One sip has more flavor than your average case of beer.

This beer taught us that patience truly is a virtue. KBS is a big imperial stout brewed with a massive amount of coffee and chocolate and then bourbon barrel-aged to perfection. Incredibly silky and full-bodied with notes of vanilla, cocoa, roasted coffee and charred oak.

YETI IMPERIAL STOUT is an onslaught of the senses. It starts with big, roasty malt flavor that gives way to rich caramel and toffee notes. YETI gets its bold hop character from an enormous quantity of American hops. It weighs in at a hefty 75 IBUs.

Originally a drink for lactating mothers, oatmeal stout was described as nutritional on early labels. Oats are in the same family as barley, and a small addition yields great flavor. Popular in the late 1800’s, the last oatmeal stout was brewed before the First World War until Samuel Smith reintroduced this style in 1980. Kentucky Bourbon Barrel Stout is brewed and aged with Alltech Café Citadelle Haitian coffee and aged in world-famous Kentucky bourbon barrels. The result is a complex stout with dark-roasted malts, hints of caramel and vanilla and a lightly roasted coffee finish.

Dragon Stout is a moderately sweet stout. It is dark brown in color with a tan head and has a dark malty aroma with a touch of roast. Lightly carbonated and easy drinking, this is a good stout for those who are beginners to dark beer.

Deep, robust and richly rewarding, this is beer to linger over. Obsidian has distinct notes of espresso, chocolate, roasted malt and black barley, with just enough hop bite to cut the sweetness.

Over-the-top but surprisingly approachable, this twist on the classic style starts with several types of malted barley, rye, oats and wheat. If you’ve ever been to our brewery, you’ve likely seen the old, beat-up truck that hauls away our spent grain. That truck belongs to Lugene who’s been feeding his dairy cows the hearty malt for over a decade. Named in his honor, Lugene Chocolate Milk Stout is brewed with milk sugar and milk chocolate. The rich and creamy brew reminds us of a cold glass of chocolate milk and our hometown “Aggie” roots.
