A true German-style Kölsch. Originally brewed in Cologne, this beer is crisp & refreshing, yet has a sweet malty body that is balanced by a complex, citrus hop character. Multiple additions of German Hallertauer hops are used to achieve this delicate flavor. We use a special Kölsch yeast, an ale yeast that ferments at lager temperatures, to yield the slightly fruity, clean flavor of this beer. This Kölsch style ale transports us back to experiencing the majesty, tradition and purity of Kölsch for the very first time. Exhibit ‘A’ Brewing went for a very traditional recreation with a little modern twist. Ingredients include Weyermann Pilsner malt, Valley Malt Warthog Wheat, Valley Malt Vienna Malt and hopped with Tettnanger and Mandarina Bavaria hops.

The laws protecting the brewing of kolsch are as strict as the German Purity Law of 1516. Kolsch beer can only be brewed within the city of Cologne. As the best-known kolsch brewery Gaffel's flavor is derived from an ale yeast that is lagered (or aged) in cold cellars. Gaffel is pale faintly fruity with a crisp hop finish. This 4.8% ABV beer is an unfiltered kolsch from Freigeist, the experimental offshoot of Cologne’s small brewery Braustelle, a part of the Brauerei Goller of Zeil Am Main, Germany. On a clever play on words the name of the beer translates as “ Eau de Cologne." The beer pours a slightly hazy golden yellow. There is a tall head of thick white foam. The aroma is grassy, lightly fruity with a tart note, a touch floral, all over golden grain with light straw. The taste follows the aromas, moderately bitter, drinking light but flavorful, with a super clean and dry finish.

Zunft Kölsch uses an Ale yeast, but is lagered. This extra cold-conditioning gives the beer a very unique flavor profile. It gives the beer a subtle fruity nose common with ales but then gives way to a sweet layered complex finish that is clean and crisp like a lager. Bright and straw-yellow in color, this beer has a prominent but not extreme hoppiness.
