It’s hard to stay a lone wolf for long, so you’ve got to stay looking over your shoulder as the weird ones are out there. It could be time to show a little teeth and let them know your bark isn’t worse than your bite. There are always new wolves in town equally hungry and equally weird. Don’t be afraid to let ‘em know who leads the pack. The most savage vintage yet. It’s deep and bloody, dripping with meaty fruit. The broad shoulders will help it age gracefully with time, but this is no brute. Its elegant baking spice and dried floral components compliment its power.

Dark red brick in color. The aroma is filled with fine sandalwood, prunes, ripe blueberries and hints of liquorice. The mouth-feel is elegant but firm and there is a nice round fruit component that is wonderfully balanced by great minerality, fine toasted oak and layers of ripe tannins. There is a vibrant long finish with a hint of bell pepper typically for Cabernet Franc. This is a great food wine and will improve nicely with age.

The Kautz Family grows the majority of its Cabernet Franc in two of Lodi’s sub-AVAs – Alta Mesa and Sloughhouse. Alta Mesa sits at elevations between 50 and 100 ft above sea level and is blessed with red clay loam soils. Sloughhouse reaches elevations up to 590 feet above sea level with has a more diverse topography, complete with bedrock, and slightly warmer climate. Excellent balance and medium body. Expressive aromas of bright red berry fruits mixed with a light spice and a hint of fresh herbs leads to flavors of red cherry and raspberry with vanilla-oak undertones.

Cabernet Franc, one of the three pillars of the classic Bordeaux blend, has proven itself as a solid producer in the Finger Lakes wine region of New York. A lot of wineries prefer this as their staple red vinifera due to the vines shorter ripening period and cold tolerance. The key to making a fine Cab Franc starts in the vineyard. Pick too early and the wine will have an unsavory green bell pepper characteristic; pick to late and the fruit will be unsound leaving the winemaker rushing to stabilize the wine from spoilage. Bully Hill makes a downright tasty Cab Franc with the grapes being sourced from Seneca Lake. The current 2013 vintage was fermented in Redwood open top fermenters for maximum tannin and color extraction. Once finished and pressed off, we fill up oak casks down in the cellar to bring this fine wine to fruition. We do small lot production of 500 cases a year and thanks to our happy herd of customers this wine sells out annually! You notice the Owl on the label? This pen and ink was concocted by Walter S. himself, humorously illustrating his inability to use his last name during Bully Hill’s lawsuits with Coca-Cola. Walter S. Whoooooo, do you know Whooo? I know Whoooo! This wine truly is a hoot.

We love transparent, delicious, easy, characterful, and deeply flavorful wines that are finely structured and relatively low in alcohol: Chinon, Bourgeuil, Beaujolais, Mondeuse, Marzemino, Lagrein, Barbera, Albarino, Vermentino, Txakolina . . . . you get the idea. What we don’t understand is why this style of wine is rarely made in the New World. While there is a school of thought that says New World wine has to be richer, higher in alcohol, and riper, we don’t buy it. We believe that if the grapes are planted on cool, appropriate sites, well-farmed, picked ripe at reasonable sugar levels, and truly minimally handled in the cellar, we can make just such wines without compromise in the New World. 93% Cabernet Franc from Camino Alto, Barsotti, Matagrano and Boeger Vineyards, El Dorado County. 7% Gamay from Barsotti Vineyard, El Dorado County, fermented separately with the native yeasts, aged and settled for four months in stainless steel with minimal sulfur, 13% alcohol naturally, blended and bottled.
