We ferment raw cane syrup and blackstrap molasses with a rhum agricole yeast strain and a chenin blanc yeast strain to develop a rich tropical fruit character. Two distillations on our hybrid pot // column still take our spirit up to approximately 180 proof. This gives our White Rum a light enough body to perform in a mojito, but leaves enough fruity character to create a fruity daiquiri. Once it comes off the still, we add filtered water, run it through a charcoal filter, then bottle it by hand at our distillery in Northeast DC.

Borough is our limited series of straight bourbons finished in rare casks. Batch No.3 is a five year old, high rye bourbon that we rested in 50 year old Armagnac casks. Coming in at 88 proof, you’ll taste hints of honey, marzipan, vanilla and warm leather.

Joseph Magnus Bourbon is a marriage of straight bourbon whiskey aged in white oak and finished in Oloroso sherry, Pedro Ximénez and Cognac casks. Rich and deep notes of vanilla, citrus, dark chocolate, brown sugar and dark stone fruits deliver with a lingering, warm finish.

Presenting Untitled Whiskey No. 13, a 10-year old high rye bourbon rested in a combination of Cognac, Spanish brandy, Amontillado, Oloroso and Pedro Ximenez sherries. The nose on this whiskey is bright and fresh, reminiscent of expressed grapefruit peel and maple sap. The palate starts with candied orange peel before richer, fruitier notes of blackberry jam and maraschino cherries appear. The finish stays on the tongue long after swallowing with hints of chestnut honey and tiramisu.

Untitled Whiskey No. 9 is a six year-old wheated bourbon blended and finished for 8 months in Limousin French oak Calvados casks. This is a bourbon that reads like a fruit forward Speyside Scotch. Months in Calvados casks impart a dry minerality, with toasted oak and crisp apple notes.

Untitled Whiskey No. 5 is our sourced Tennessee sour mash whiskey aged for four months in a Sandeman tawny port cask. Burnt sienna in color, this whiskey marries dried black fruits and musky port lees on the nose with luscious sweetness balanced by a light, smoky char and finishing with long notes of dark chocolate.

A bittersweet liqueur with aromas of green walnuts, brown spices, vanilla and ripe berries with a long and rich finish.

For our take on America’s oldest spirit we partner with a fourth generation apple grower 200 miles from the distillery. We ferment a blend of biodynamic apple juice then rest and distill the cider on the lees in our pot still to produce the robust apple notes of Chapmans. The resulting apple spirit is dual-aged in French and American oak for not more than 6 months, resulting in bold orchard fruit notes. The finished blend highlights our favorite qualities of apple brandy from French and American traditions. We think Johnny “Appleseed” Chapman would be proud. The nose is fruit forward with notes of sweet citrus, baked golden delicious apple, and pear. The palate has a medium body carrying Bartlett pear, honey dew, and white chocolate. The sip finishes with notes of caramelized ginger, overripe pear and vanilla- lingering and complex. Delicious on its own, Chapmans is also delightful added to a glass of champagne or mixed in an Old Fashioned style cocktail like the American Trilogy.

Untitled Whiskey No. 7 is our first cask strength release. Featuring a blend of whiskeys finished in Port and Cognac casks, No. 7 announces itself with aromas of candied fruit and a hint of fresh orange peel. The palate opens with hot buttery toffee and maple syrup proceeding to spiced fruits and oak and finishes with notes of chocolate mint.

The balance struck between sweet, sour, bitter, and spicy notes makes it useful as a substitute for amari or aromatized wine in cocktails. Apply soda water and the juice of half a lime to a jigger of dram to make our renowned Dram Rickey.

We got the trademark on Rodham Rye last March when we, like much of the country, thought the 2016 election results would be different. After the results came in we were faced with the decision to change course, or persist. So, we charged forward and made Rodham Rye a tribute to all the women who came before us- the women who fought for the right to vote and to repeal prohibition, who run for office and start new businesses. A portion of the proceeds from each bottle go to recruiting and training women to run for office.

Where many spiced rums suffocate under too much sugar and vanilla flavoring, ours contains very little added sugar, no vanilla, and a whole slew of unusual botanicals. Baking spices like cinnamon, nutmeg, and allspice form its core, but herbaceous and savory additions like lemon verbena, caraway, cumin, and fenugreek take us into a firm chai tea-like territory. Spicy, earthy, herbaceous, savory, and citrusy- it’s a very unusual spirit.

Untitled Whiskey No. 6 is a nine year-old high-rye bourbon blended and finished in Cognac, Muscat, and Oloroso sherry casks here at the distillery. The nose hints of leather, French oak, vanilla and dried apricots. Opening with Cognac and spice forward rye on the palate, the bourbon gives way to sweeter notes of maple, raisins and blackberries.

THE BARLEY AND ESPRESSO COFFEE ARE OVEN ROASTED WITH ACACIA WOOD FOR A MAXIMUM OF 28 MINUTES, THE MIXED WITH 15 BOTANICALS. THE GENTLE SWEETNESS BRING OUT NOTES OF BLACK LIQUORICE, BARLEY, DARK CHOCOLATE, AND VANILLA.

Vigilant Navy Strength Gin is crafted from 100% corn distillate, steeped and distilled with family made harissa, figs, fresh mint, fresh lemon, hops, and hibiscus. It features dried, 4 year old Italian juniper berries and packs a punch at 114 Proof.

Full, round, and friendly. Sip neat or use in fuller, heavier rum cocktails. We rest our White Rum in used bourbon barrels from other local distilleries for several months to pick up color, weight, and a fair amount of vanillin. Once we empty the barrel, we infuse the rum with a small amount of Sweet Woodruff, a soft green herb that contributes a delicate aroma of vanilla, hay, and tea.
