Derek George Benham first discovered gin on a summer trip during college to Spain, where he had his first “real” gin and tonic. It was a transformative experience and something he wanted to bring back home. He was determined that the first spirit from Graton Distilling Co. would be the gin he always dreamed of making.

Pipe Dream Bourbon is made from a high corn mash-bill and blended from barrels aged between four and twelve years. Smooth and complex, it is a true sipping whiskey. Powerful nose of sweet maple, vanilla and a hint of honey. On the palate, it is rich, deep and complex with roasted pecan, vanilla and lingering char and woody notes. Named after the fastest growing Redwood in the world, Emerald Giant is a fan favorite in the Rye world. We started with a mash-bill of 95% premium rye and aged it for over 3 years in new charred oak barrels. Spicy with an exceptionally smooth finish, it is a great choice in your classic whiskey cocktails. Natural rye aroma followed by a mix of brown sugar and cinnamon with a faint hint of pepper. On the palate, there is an unparalleled spice complexity with smooth rye notes. A hint of honey and orange peel becomes peppery with a lingering cinnamon finish. Mash Bill: 95% Rye, 5% Malt Barley

Some like it hot – and so do we. We like to keep things interesting, so in 2016 we decided to dump a whole bunch of chilies into our vodka and see how things turned out. Spoiler alert: it went well. Seven varieties of organic peppers including habaneros are sourced as locally as possible, then hand-chopped and given a long soak in our Organic Original Vodka. No chili powder or syrups here. How it tastes: Like heat and spice and everything nice. Sweet and savory, the peppers come through strong on the nose and palate but are balanced by a hint of lemongrass on the finish. We hand-peel, hand-seed, and hand-chop hundreds of organic cucumbers and macerate them in our Organic Original Vodka – so you can get the freshest cucumber taste without any of the fake ingredients. How's it taste: The short answer: pretty damn refreshing. The long answer: astonishingly crisp, like rejuvenating spa water with a little (okay, not so little) kick, featuring notes of hibiscus and cilantro on the nose followed by a light and minty finish.

Meticulously pot distilled, each batch of our Four Grain Straight Bourbon Whiskey is the proprietary master blend of our two Bourbon formulas. Featuring 60% corn with wheat, rye, and barley in the mash bills, our grains are all organic and the corn and wheat are California grown. Mashed, fermented, distilled and aged on-site by female distilling team this Bourbon features impressive palate complexity from each of the four grains. Smooth and welcoming in any cocktail our Bourbon is also especially delicious sipped neat. Originally created as the base for our Gin, we decided to bottle our Vodka after many requests during early distillery visits. This spirit is the perfect example of our unique grain to glass process. Distilled from 100% organic, Red Winter Wheat grown in California's Sacramento Valley, our Vodka has sweet caramel and warm earthy notes—like the grain itself—and provides a round mouthfeel and extremely smooth finish.

Our Straight Wheat Whiskey is made from 100% organic, Red Winter Wheat grown in California’s Sacramento Valley. Each batch is aged for a minimum of two years in 53-gallon, charred, brand new American White Oak barrels; it is non-chill filtered in order to preserve the full aromatic complexity of this uniquely American spirit. Deliberate cuts during distillation ensure that this whiskey emerges from its time in barrel as a finely layered and truly distinguished spirit. Sonoma County Distilling rejoices in their grain-to-glass technique, with everything done in house, using alembic pot distillation. This 100% rye (both malted and unmalted) is aged in new charred oak casks, then finished in used casks for mellowing.

Each batch of our Gin starts with the same Red Winter Wheat as our Vodka. It is the distinct characteristics of the grain that create our round and slightly sweet base. This base is classically infused with juniper berries, to which we add both traditional old-world and unique California botanicals. We hand zest lemons and oranges for bright citrus notes; add hibiscus as our floral component, include coriander and cardamom for subtle spice, and add orris and angelica root. Some botanicals are macerated directly in the pot while others are hung in the neck to gently characterize the vapor.
