The first batch of Vieux Carré was released on December 31, 2008. It is the first legal absinthe to be distilled, bottled and sold on the east coast of the United States in nearly 100 years.

Lock, Stock & Barrel Limited Release 13 Year Old Straight Rye Whiskey is crafted in Pennsylvania — the birthplace of rye whiskey — from 100% rye grains. The rye is grown in the Pacific Northwest, where only grains that exhibit the perfect combination of weight, plumpness and rich, earthy fragrance are harvested. After the grains have been milled and mashed, they are fermented before being distilled through a double copper-pot still. Following distillation, the rye is aged in new, charred American oak casks for 13 years before being bottled at nearly barrel proof (101.3 proof). As a result of its extra-long maturation, the rye has an aroma of salted caramel, buttered popcorn and toffee. The aroma gives way to complex notes of sweet vanilla, milk chocolate, roasted coffee and honeyed oak, which are nicely balanced with a subtle spicy undertone, and lead a sweet, elegant finish.

Already a gold medal winner at the 2016 New York World Wine and Spirits Competition, Maggie's Farm La Revuelta is our unique dark rum, one made more in a traditional Caribbean style where we actually blended the rum. In this case, we mixed our raw cane pot-distilled rum from Pittsburgh in a 50/50 proportion with a column-distilled molasses rum from Trinidad. This produced a rum with the smoothness of an aged column-distilled rum, but with the body and flavor of a younger pot-distilled rum while maintaining a reasonable pricepoint and allowing us to continue properly aging our own Single Barrel rum without interruption.

Our wheated Organic Pennsylvania Bourbon mash is made up of local organic yellow corn and organic soft winter wheat, as well as malted barley. Production begins when we grind the whole grains into grist that, once mixed with water and yeast, becomes the basis for one of America’s favorite spirits. Once the mash is fermented, we process moves to our copper kettle stills where the fermented mash is transformed into a high alcohol spirit. After aging in new, charred, American-oak cooperage, this robust Bourbon whiskey is bottled by hand at 92 proof. It is exceptionally sweet on the nose with a pleasant brown sugar note. In a snifter the Bourbon’s sweetness is complimented by a mineral-y earthiness and baking spice flavors (clove, vanilla). Wigle’s Pennsylvania Bourbon is a whiskey sure to please the most discerning of palettes when served neat or on the rocks, but is also a great choice for cocktails!

Using a barrel finishing process from the 18th century, Bluecoat Barrel Finished Gin is produced by aging Bluecoat American Dry Gin in new American oak barrels for 3-8 months, providing a unique, well rounded and complex spirit. The finishing process utilizes charred barrels to round and soften the gin, introducing hints of caramel, vanilla and toffee without sacrificing juniper or pepper notes.

Aged for four years in newly-charred white American oak barrels, Kinsey Rye marries bright piney flavor with savory, malted rye undertones. A well-balanced representation of classic Pennsylvania spirits, Kinsey Rye contains a blend of three different mash bills all over 4 years old and has a proof of 86.
