This Caravedo is a pisco puro, which means that it is made with only one grape from the allowed eight in the production of Peruvian pisco. In this case, they use the quebranta grape. Quebranta is a non-aromatic varietal so the fruit notes that you find will be minimal. As it the case with all Peruvian piscos, this is distilled to proof without any water added at any point. Method of Production: Single-distilled to 40% ABV (80 proof) requiring approximately 3 kilos (7 lbs.) of quebranta grapes to produce one 750ml bottle. Distilled from 100% fully-fermented grape juice, pure wine (no pomace) and rested a minimum of six months with no additives of any kind: no color, no water, no sugar, no wood flavoring. Distilled through alambique copper pot stills.

The Caravedo Acholado Pisco is single distilled to 86 proof requiring 18 lbs. of a blend of Quebranta, Italia, Torontel, and Albillia grapes to produce one 750ml bottle. Distilled from fully fermented wine (no pomace) and rested a minimum of one year with no additives of any kind including coloring, sugar, and water. Blending is done after distillation. Distilled through German Alambique and ancient Falca stills.

Mal Paso Pedro Jiménez is a transparent pisco with silver trim. Fruity aromas of green skin and citrus and herbal notes can be perceived. It is soft on the palate, since it has a slight oiliness that gives it a balanced alcohol character. Ideal for all types of cocktails.

A blend of handpicked muscatel variety grapes undergo the winemaking and fermentation process before entering copper stills to be refined in single batches. We use only the two most aromatic grapes of the permitted varieties in chilean pisco: 50% Muscatel of Alexandria and 50% Rosé Muscatel. · After resting for at least 90 days in stainless steel, it is bottled immediately, never touching a barrel. Named as El Gobernador, it is a tribute to Felipe Margutt Donaire, who participated in The Battle of Maipú in 1818, which decided Chile’s independence. For his achievements, he was awarded the Governorship of Ovalle. He helped support the town’s progress out of his own humble pocket and is best remembered astride his horse, solving the problems of the people. One of the great unconventional heroes, he never sought fame or fortune.

Transparent and crystalline Artisan Pisco, without being opaque. On the nose, floral and citrus aromas of medium to high intensity. In the mouth, good body, warm mid palate with some unctuousness, it has a very well achieved sweetness. At room temperature it is fairly balanced without exhibiting any apparent defects, with a notable alcoholic sensation.

On the nose it is very perfumed with tones of muscat, quince and orange peel. The months of aging give toasted notes that make it more complex and elegant. In the mouth it is soft, sweet and fragrant, with a very good finish.

This is a dry Pisco with aromas of lychee and peach which carry through to the palate where it picks up nice apple skin notes. This is a nice sipper, not just a blender
