Dry Hopped Sour Ale

As the rival of the great Chug Norris, Brews Lee continues to hold the title of the greatest martial artist…I mean beer, that’s ever existed! Extremely tropical. Whole-lotta dank. Extra Hoppy. Mosaic. Double. IPA.

An American wheat beer with a Belgian inspiration, Sundown Wheat aims to blend the best of two worlds. This refreshingly light beer is brewed with American wheat, two-row barley, and a touch of flaked oats. It is delicately hopped with American Sterling hops and spiced in the tradition of Belgian wit beers, using coriander and dried sweet orange peel.

The new beer is Barrel-Aged Bible Belt, a 12 percent ABV imperial stout brewed with cacao nibs, chili peppers, coffee and vanilla beans before being aged in Heaven Hill whiskey barrels for between seven and nine months. As the name suggests, the base beer is Bible Belt, a 13 percent imperial stout first released in 2014 that combines Evil Twin’s Even More Jesus imperial stout (12 percent ABV) and the same spices and other adjuncts that are used in Prairie’s Bomb! imperial stout (13 percent ABV.)

Prairie Weisse is our take on a traditional Berliner Weisse. This beer is light, refreshing, and lemony-sour. It finishes with a touch of malt to help balance out the flavor.

Prairie Ale is our classic saison. We brew this beer with pilsner malt, wheat malt, flaked wheat, and cane sugar. A healthy dose of saaz hops are used to add a spicy element to the beer. Prairie Ale is fermented with a mix of ale yeast, wine yeast, and brettanomyces. Notes of black pepper and pineapple can be found in this beer.

Kettle sour with Brett and Pink Guava.

Peaches of Me is fermented exclusively with wild yeast captured underneath the mulberry tree in our own brewery backyard. This beer is matured with fresh peaches to present a funky and tart table beer.

Our Winter Lager seasonal went over so well in 2011 that we decided to make a year-round beer! Route 66 is a traditional, amber lager brewed with four types of barley, Hallertauer and Willamette hops giving it a crisp, malty finish. 5.0% ABV and 18 IBU’s. Available only in bottles and on draft at select locations.

A Hoppy Farmhouse Ale Prairie Standard is our everyday beer. Its a light, crisp saison with a hoppy finish. This beer is dry hopped 1lb per bbl with Motueka hops. A lovely New Zealand hop with a spicy lime like flavor and aroma.

Taking a step away from our namesake, once a year we craft a lager worthy of extra days in the cellar. The COOP Oktoberfest combines Munich malt, Bavarian hops and a traditional German yeast, and calls for the celebration of fall’s arrival.
