What you have here is the only Imperial IPA in America inspired by a bowl of soup and a thrift store football game… Back in the 90’s, Sam was struck by a cooking show demo teaching viewers how to properly season soup through a process of continuous peppering. As it stewed and simmered, the chef added pepper in small but consistent doses, bringing through a unique bold taste and intense savory notes. If it worked for soup, why not beer?! Inspiration sparked and Sam knew that Dogfish needed to bring this idea of continuous dosing to our hop additions in the brewhouse. Enter our thrift store electric football game. If rigged at just the right angle over the brew kettle, and covered with hops instead of small dancing football players, the vibrating playing field would perfectly shake and shimmy the hops cascading down into the boiling wort at a consistent rate. Continual hopping was born! Continual hopping provided a beautiful balance to our Imperial IPA - allowing us to add a foolhardy amount of hops throughout the boil without making 90 Minute crushingly bitter. With rich pine and fruity citrus hop aromas and a strong malt backbone, Dogfish Head 90 Minute IPA created pungent, unapologetic flavor that led Esquire to call it “perhaps the best IPA in America.”

This true indie craft beer has all the character of a world class IPA, but with only 95 calories, 3.6g carbs, 1g protein and 0g fat per 12oz serving. Seriously. But how? Digging deep into our culinary roots, we found our answer in an ancient Chinese delicacy - monk fruit. Sweeter than sugar per ounce, monk fruit amplifies the body and complexity of the beer, yet contains no calories. Whereas most IPAs start with a formidable malt bill to balance hoppy bitterness with malty sweetness, Slightly Mighty goes about it a different way – all through the magic of monk fruit. Most light beers are watery and lack body, but with Slightly Mighty, the monk fruit essentially acts as the beer’s skeleton, on which mighty hop muscle and flavor can be built. It allows us to reduce the malt bill and avoid any unnecessary unfermentable sugars, and consequently deliver a beer that is lower in calories and carbs, and perfectly balanced. The result is a hazy gold lo-cal IPA that throws tropical notes of pineapple, coconut, mango and citrus, all while delivering an aromatic hoppiness that makes it oh-so drinkable. Fort is also an excellent food beer. Our favorite pairings include anything chocolate or a nice piece of duck. The Fort label art was designed by our rock-and-roll friend Tara McPherson. That same spirit can be found in our latest collaboration with the analog creators at Kodak. They’re bold. They’re storytellers. And well, they’re our kind of people. Which is why we’ve teamed up with them to ‘develop’ a one-of-a-kind partnership that’s full of creative chemistry. It all started when Dogfish founder & CEO Sam Calagione learned during a Kodak podcast that if the pH of a beer is low enough, it just might be able to develop their Super 8 film. Challenge accepted. Insert SuperEIGHT (the beer). This sessionable super gose is brewed with eight heroic ingredients: prickly pear, mango, boysenberry, blackberry, raspberry, elderberry, kiwi juices, toasted quinoa and an ample addition of red Hawaiian sea salt! Okay, so technically that's nine, but it 'gose' without say that there's going to be salt. These unique ingredients give this beer a vibrant red color, with delicious flavors of berries and watermelon, along with a tart - yet refreshing - finish. But that’s not all … it also effectively develops Kodak’s Super 8 film. From the can to the stop bath, there’s a whole lot of science and alternative processing that takes place to bring the imagery to life. And it’s so totally worth it.

A refreshing neo-Berliner Weisse, Festina Peche is available in 4-packs and on draft during the sweaty months. Sadly, there are only a few breweries left in Berlin still brewing the Berliner Weisse style, which is characterized by its intense tartness (some say sour). There were once over 70 breweries in Berlin alone making this beer! In addition to fermentation with an ale yeast, Berliner Weisse is traditionally fermented with lactic cultures to produce its acidic (or green apple-like) character. Served as an apertif or summertime quencher, Festina is delicately hopped and has a pale straw color. To soften the intense sourness, Berliner Weisse is traditionally served with a dash of essence of woodruff or raspberry syrup. In Festina Peche, since the natural peach sugars are eaten by the yeast, the fruit complexity is woven into both the aroma and the taste of the beer so there is no need to doctor it with woodruff or raspberry syrup. Just open and enjoy!

Similar to a beer brewed in China some 9,000 years ago, Chateau Jiahu used a recipe that included rice, honey, and grape and hawthorn fruits. The formula was obtained from archaeologists who derived it from the residues of pottery jars found in the late Stone Age village of Jiahu in northern China. The residues are the earliest direct evidence of brewed beverages in ancient China.

This oak-aged hybrid has been gaining popularity over the past few years and is now available year-round. For Burton Baton, we brew two "threads," or batches, of beer: an English-style old ale and an imperial IPA. After fermenting the beers separately in our stainless tanks, they're transferred and blended together in one of our large oak tanks. Burton Baton sits on the wood for about a month. When enjoying the Burton Baton, you'll find an awesome blend of the citrus notes from Northwestern hops melding with woody, vanilla notes from the oak. The wood also tends to mellow the 10% ABV of Burton, so tread cautiously!

A big, Belgian-style Wit brewed with coriander and orange peel and fermented with Pinot Noir juice. After fermentation a fraction of the batch is aged in Oregon Pinot Noir barrels, and another fraction is aged on oak staves. The beer is blended together before packaging. This has been one of our most popular Limited Edition beers at both our Rehoboth Beach, DE brewpub and at festivals. It successfully marries the refreshing citrusy qualities of a Belgian-style white beer with the robust complexity of a bold red wine.

Dogfish Head Noble Rot ABV: 9.0 IBU: 18 Availability: Limited Original Release Date: 02/2011 Hmmm. We wonder if anyone will buy a beer with the word "rot" in the name? This saison-esque science project gets complexity and fermentable sugars from two unique wine grapes sourced with our friends at Alexandria Nicole Cellars in Prosser, Wash. The first addition is unfermented juice, known as must, from viognier grapes that have been infected with a benevolent fungus called botrytis. This noble rot reduces the water content in the grapes while magnifying their sweetness and complexity. The second is pinot gris must intensified by a process called dropping fruit, where large clusters of grapes are clipped to amplify the quality of those left behind. "This is the absolute closest to equal meshing of the wine world and the beer world thats ever been done commercially," says Dogfish's Sam Calagione. Noble Rot is brewed with pils and wheat malts and fermented with a distinct Belgian yeast strain. It has a spicy white wine body and a dry, tart finish. Noble Rot first went on tap at our brewpub in February of 2011 and went into full 750ml bottle production in January 2012. Food Pairing Recommendations: Crab, lobster, Gouda Wine Comparable: Sauternes
