What you have here is the only Imperial IPA in America inspired by a bowl of soup and a thrift store football game… Back in the 90’s, Sam was struck by a cooking show demo teaching viewers how to properly season soup through a process of continuous peppering. As it stewed and simmered, the chef added pepper in small but consistent doses, bringing through a unique bold taste and intense savory notes. If it worked for soup, why not beer?! Inspiration sparked and Sam knew that Dogfish needed to bring this idea of continuous dosing to our hop additions in the brewhouse. Enter our thrift store electric football game. If rigged at just the right angle over the brew kettle, and covered with hops instead of small dancing football players, the vibrating playing field would perfectly shake and shimmy the hops cascading down into the boiling wort at a consistent rate. Continual hopping was born! Continual hopping provided a beautiful balance to our Imperial IPA - allowing us to add a foolhardy amount of hops throughout the boil without making 90 Minute crushingly bitter. With rich pine and fruity citrus hop aromas and a strong malt backbone, Dogfish Head 90 Minute IPA created pungent, unapologetic flavor that led Esquire to call it “perhaps the best IPA in America.”

Mighty hop character and just 95 calories … that can’t be possible. Oh, but it is! After a year of R&D and months of fine-tuning what seemed to be unimaginable, Slightly Mighty is finally here! This true indie craft beer has all the character of a world class IPA, but with only 95 calories, 3.6g carbs, 1g protein and 0g fat per 12oz serving. Seriously. But how? Digging deep into our culinary roots, we found our answer in an ancient Chinese delicacy - monk fruit. Sweeter than sugar per ounce, monk fruit amplifies the body and complexity of the beer, yet contains no calories. Whereas most IPAs start with a formidable malt bill to balance hoppy bitterness with malty sweetness, Slightly Mighty goes about it a different way – all through the magic of monk fruit. Most light beers are watery and lack body, but with Slightly Mighty, the monk fruit essentially acts as the beer’s skeleton, on which mighty hop muscle and flavor can be built. It allows us to reduce the malt bill and avoid any unnecessary unfermentable sugars, and consequently deliver a beer that is lower in calories and carbs, and perfectly balanced. The result is a hazy gold lo-cal IPA that throws tropical notes of pineapple, coconut, mango and citrus, all while delivering an aromatic hoppiness that makes it oh-so drinkable. Fort has a Belgian-style base, then we follow a similar fermentation process to the one we use on beers like 120 Minute IPA and World Wide Stout. Fort is an excellent candidate for cellaring. Grab a few bottles, enjoy one now and lay the others down for a few years. Want to know when the Fort you find was bottled? Check the 'Bottled On' date on the neck of each bottle. Fort is also an excellent food beer. Our favorite pairings include anything chocolate or a nice piece of duck. The Fort label art was designed by our rock-and-roll friend Tara McPherson. Tara also did the label art for our Chateau Jiahu and our 2012 Seasonal Prints and Uber-Tap Handle. Can you tell we kinda love her work?!

That same spirit can be found in our latest collaboration with the analog creators at Kodak. They’re bold. They’re storytellers. And well, they’re our kind of people. Which is why we’ve teamed up with them to ‘develop’ a one-of-a-kind partnership that’s full of creative chemistry. It all started when Dogfish founder & CEO Sam Calagione learned during a Kodak podcast that if the pH of a beer is low enough, it just might be able to develop their Super 8 film. Challenge accepted. Insert SuperEIGHT (the beer). This sessionable super gose is brewed with eight heroic ingredients: prickly pear, mango, boysenberry, blackberry, raspberry, elderberry, kiwi juices, toasted quinoa and an ample addition of red Hawaiian sea salt! Okay, so technically that's nine, but it 'gose' without say that there's going to be salt. These unique ingredients give this beer a vibrant red color, with delicious flavors of berries and watermelon, along with a tart - yet refreshing - finish. But that’s not all … it also effectively develops Kodak’s Super 8 film. From the can to the stop bath, there’s a whole lot of science and alternative processing that takes place to bring the imagery to life. And it’s so totally worth it.

Deepening our bond with Sierra Nevada Brewing Co., forged with the 2009 collaboration Life & Limb, we've brewed an East-meets-West Imperial IPA called Rhizing Bines. “We had a lot of fun brewing the original dark and roasty Life & Limb in Chico with the Grossmans and Sierra Nevada’s extended family,” says Dogfish Head President and Founder Sam Calagione. “We are very proud of the way that beer turned out. Now it’s our turn to repay that hospitality and brew a very hop-centric IPA in Milton with our pals from Chico, incorporating innovative ingredients and techniques from both breweries.” On the hot side, Rhizing Bines went through Dogfish’s signature continual-hopping process with floral and citrusy Bravo hops. On the cold side, it was dry-hopped with an experimental varietal so new it doesn’t yet have a name, just a number: Hop 644. A component of Sierra Nevada’s aroma-boosting Torpedo system made a pit-stop in Delaware for dry-hopping duty before it headed to Sierra’s new North Carolina brewery.

Theobroma is a celebration of chocolate, the food of the gods. This Ancient Ale is based on chemical analysis of pottery fragments found in Honduras that revealed the earliest known alcoholic chocolate drink used by early civilizations to toast special occasions. The discovery of this beverage pushed back the earliest use of cocoa for human consumption more than 500 years to 1,200 B.C. As per the analysis, Dogfish Head's Theobroma (translated into "food of the gods") is brewed with Aztec cocoa powder and cocoa nibs (from our friends at Askinosie Chocolate), honey, chilies and annatto (fragrant tree seeds). It's light in color, not what you expect from your typical chocolate beer (not that you'd be surprised that we'd do something unexpected with this beer!). This beer is part of our Ancient Ales series -- along with Midas Touch, Chateau Jiahu, Sah'tea and Ta Henket -- so step back in time and enjoy some Theobroma
