What you have here is the only Imperial IPA in America inspired by a bowl of soup and a thrift store football game… Back in the 90’s, Sam was struck by a cooking show demo teaching viewers how to properly season soup through a process of continuous peppering. As it stewed and simmered, the chef added pepper in small but consistent doses, bringing through a unique bold taste and intense savory notes. If it worked for soup, why not beer?! Inspiration sparked and Sam knew that Dogfish needed to bring this idea of continuous dosing to our hop additions in the brewhouse. Enter our thrift store electric football game. If rigged at just the right angle over the brew kettle, and covered with hops instead of small dancing football players, the vibrating playing field would perfectly shake and shimmy the hops cascading down into the boiling wort at a consistent rate. Continual hopping was born! Continual hopping provided a beautiful balance to our Imperial IPA - allowing us to add a foolhardy amount of hops throughout the boil without making 90 Minute crushingly bitter. With rich pine and fruity citrus hop aromas and a strong malt backbone, Dogfish Head 90 Minute IPA created pungent, unapologetic flavor that led Esquire to call it “perhaps the best IPA in America.”

Mighty hop character and just 95 calories … that can’t be possible. Oh, but it is! After a year of R&D and months of fine-tuning what seemed to be unimaginable, Slightly Mighty is finally here! This true indie craft beer has all the character of a world class IPA, but with only 95 calories, 3.6g carbs, 1g protein and 0g fat per 12oz serving. Seriously. But how? Digging deep into our culinary roots, we found our answer in an ancient Chinese delicacy - monk fruit. Sweeter than sugar per ounce, monk fruit amplifies the body and complexity of the beer, yet contains no calories. Whereas most IPAs start with a formidable malt bill to balance hoppy bitterness with malty sweetness, Slightly Mighty goes about it a different way – all through the magic of monk fruit. Most light beers are watery and lack body, but with Slightly Mighty, the monk fruit essentially acts as the beer’s skeleton, on which mighty hop muscle and flavor can be built. It allows us to reduce the malt bill and avoid any unnecessary unfermentable sugars, and consequently deliver a beer that is lower in calories and carbs, and perfectly balanced. The result is a hazy gold lo-cal IPA that throws tropical notes of pineapple, coconut, mango and citrus, all while delivering an aromatic hoppiness that makes it oh-so drinkable. That same spirit can be found in our latest collaboration with the analog creators at Kodak. They’re bold. They’re storytellers. And well, they’re our kind of people. Which is why we’ve teamed up with them to ‘develop’ a one-of-a-kind partnership that’s full of creative chemistry. It all started when Dogfish founder & CEO Sam Calagione learned during a Kodak podcast that if the pH of a beer is low enough, it just might be able to develop their Super 8 film. Challenge accepted. Insert SuperEIGHT (the beer). This sessionable super gose is brewed with eight heroic ingredients: prickly pear, mango, boysenberry, blackberry, raspberry, elderberry, kiwi juices, toasted quinoa and an ample addition of red Hawaiian sea salt! Okay, so technically that's nine, but it 'gose' without say that there's going to be salt. These unique ingredients give this beer a vibrant red color, with delicious flavors of berries and watermelon, along with a tart - yet refreshing - finish. But that’s not all … it also effectively develops Kodak’s Super 8 film. From the can to the stop bath, there’s a whole lot of science and alternative processing that takes place to bring the imagery to life. And it’s so totally worth it.

The story of Lupu-Luau began when Sam was hanging outside with coworkers during an overly-sunny day. One present coworker in particular was lacking heavily in the melanin department, to put it lightly. A friendly joke about a total tan aversion led to this legendary comment, “You can say it, Sam, I’m pale as f**k.” The brewer in Sam thought that would make a cool name for a super pale beer. From there the wheels started turning and the iterative R&D process began. Sam set out to make a hazy, overly pale, beer but the test batches weren’t quite there yet. However, during that process, he found out how great coconuts work in an IPA and decided that the new goal was to make an IPA using as much coconut as possible. We started with a combination of Pils malt with flaked barley, rolled oats, and malted and raw wheat to get it all hazy. Then we introduced coconuts three ways by adding toasted coconut, dehydrated coconut water and an experimental hop variety that provides a unique coconut & woody aroma. The result? A lupulin-loaded, coconut-centric ale. Our Lupu-Luau IPA!

Tweason'ale is a beer we brewed on the cusp of summer. It is a gluten-free sorghum based beer brewed with fresh strawberries from our friends at Fifer Orchards near Dover, Delaware. For the sorghum, we sourced a dark, sweet, syrup with notes of molasses and pit-fruit. We also used a a dark buckwheat honey with a beautiful hay-like, earthy-malty thing that we felt added the final touch to this Tweason'ale recipe.

We began brewing this one at our pub in 1996 (we began packaging and selling it sometime in 1998) as the answer to the question, "What beer should I enjoy with a wood-grilled steak?" Raison D'Etre fits the bill. It's as tasty and complex as a fine red wine.

Pour is dark orange with 1/2 finger of foam and little lace left behind. Smell is all fruit. Cranberry is most prominent with lemon and grapefruit in the background. Taste very tart with a sour cranberry taste. Honey and lemon and grapefruit mix well with the cranberry and sour notes. Surprisingly there is no booze to this even with the high abv. Smooth finish gives it amazing drinkability. This may open a door for me into more fruit type beers. Absolutely amazing brew. Well done by DFH
