At Hermit Thrush Brewery, we encourage the reduction of waste in any way that we can. In looking at historical brewing processes, we were intrigued by the Parti-gyle style of brewing where the mash from a strong beer is used a second time to make the wort for a lower-alcohol small beer. In honor of the style, we named the beer Party Guy, and will continue to use the name for our experiments in exciting new small beers.

This kettle soured wild ale is fruited with Blueberries, uses local hops, and is soured with native lactobacilli. 5.9%abv Party Jamz is our series of kettle sours with fruitz and local hops. We add just enough fruit to evoke said fruit flavor, but hold back just enough to allow the complex fruitiness of our native mixed culture fermentation to come through. These beers are balanced with an upfront fruit flavor, followed by a gentle tart and hoppy background. These are beerz everyone can get down with.

Our Fated Farmer Series is a landmark step toward realizing our foundational vision for Trillium: Build a place that intuitively celebrates the intersection of New England farming, agriculture, brewing and an integrated community experience. The grist of each of the dynamic Fated Farmer wild ales is set on the structure of Valley Malt and is barrel fermented in 500L puncheons with our Native New England Wild Culture and aged for 5-7 months, before refermenting on freshly harvested fruit. The addition of fresh blueberries sourced from Ward's Berry Farm in nearby Sharon, Massachusetts create a beautiful crimson/purple hue. Aromas of dark cherries, blueberry, and an earthy funk give way to a tart blueberry palate teeming with notes of nutmeg and mulled cranberries.

Fittingly, Agrestic Ale begins its journey as DBA; the foundational beer first offered when Firestone Walker opened its doors in 1996. Oak barrels along with our proprietary collection of microflora act like a chrysalis process, transforming DBA into Agrestic Ale over the course of several months. The result is a synergistic blend of beer matured in French and American oak with signature flavors and aromas: wood-derived toast, lemon pith, and rosewood swirl on the nose and palate, followed by an amazing harmony of vanilla, coconut and Earl Grey tea. Dark cherries, caramel malt and spice round out its complexity and drinkability. The finish is crisp with a mouthwatering acidity and chewy tannins. Santé!

Brewed with oats and wheat, and fermented out with two strains of saison yeast. It spends about six to nine months in an assortment of barrels-Petite Sirah, Grenache, Chardonnay-while being fermented with Brettanomyces, Lactobacillus, and a house yeast culture from their in-house solera system. It's then blended with an all-Brett beer that's barrel-aged separately, bringing in more tropical and guava notes. Oh, and it's dry-hopped at 1.5 pounds per barrel with Simcoe, Nelson, and Citra.
