Made in Brussels, Belgium, Lindemans Brewery produces some of the world's best lambic beers. Lambic beers are made by using the wild fermentation of natural yeasts found in the area. This raspberry framboise is a young lambic fruit beer enriched with pure raspberry juice. Somewhere between sparkling wine and beer, Lindemans Framboise Lambic has a powerful raspberry aroma with a slight hint of caramel. It has a somewhat bitter finish that's characteristic of lambic beers. We recommend serving this versatile brew as an aperitif, and if you feel like experiementing try using it for cooking.

Breaking the mold among existing beer styles, Lindemans developed the Botanical Lambics, a collection of old gueuzes with a twist. Third in this series, GingerGueuze is based on a blend of 12 month-old lambic with two- to three-year-old lambic, fermented in oak with fresh ginger. Bottle-conditioned, GingerGueuze has a golden color and combines the sourness of lambic with the subtle flavors of fresh ginger. Ideal as an aperitif, it is also perfect for food paring.

Cask no. 108, dating from 1935, came to us from a different brewery, whose beers contained some volatile acidity. The foeder now adds a bit of character to all our geuse blends.

This spontaneous fermented beer has been aged in Hungarian oak barrels and appears with a light amber color with almost no head. The aroma is huge and very vinous. A clear impression of oxidized apples is the first thing that hits you, which made us think of heavy old fashioned British apple ciders. The aroma also reveals the wooden notes from the barrels along with some burned toffee and spices like Star anise. It has a very heavy acidic profile at first, one that quickly slides into a smooth kind of sweetness. We taste green apples, carambola and very young green grapes. It has a certain lactic acidic touch and a creamy dry finish that lasts forever and bares the green impressions through. Some mild creamy blue cheese on roasted rye bread would work great due to both the lactic and acidity impressions in this beer.

Humulus Rueuze is a variation on our take on the traditional Belgian-style lambic gueuze with one major exception: massive amounts of dry hops. To begin, we carefully select a number of oak barrels that have been aging our sour blonde ale for anywhere from several months to several years, and then blend the beers together for the ideal flavor. Once that is achieved, we pile heaps of Huell Melon hops on top to achieve an aromatic blend like no other, inundating the senses with citrusy, tropical, funky and grassy goodness. This is one complex beer, and it’s best consumed fresh.
