The nose is fruity with black and red fruit aromas leading on to more discrete spicy notes. The well-structured palate evolves toward a complex finish with more gamey notes with well-integrated oak. This Savigny-Lès-Beaune Premier Cru "Les Peuillets" is an ideal wine for fine dishes such as red meat, game and classic cheeses. Drink while young to best appreciate this wine’s fruitiness or lay down for a dozen years or more to allow the more gamey and spicy notes to develop.

This is an 80-are plot on the slopes of the commune that enjoys excellent sunshine. Forty years old, this vineyard produces rich, elegant wines that will blossom after several years of ageing thanks to a good tannin presence. This plot's situation gives its wines mineral accents that combine naturally with the red fruit notes typical of the Pinot Noir varietal.

The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when François Tollot began planting vineyards in Chorey-lès-Beaune. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot are in charge. Les Lavières is named after a flat piece of stone called “lave.” This is one of Savigny’s best premier crus despite its northeastern exposure. Savigny sits in a small east-west valley perpendicular to the côte. Vineyards on the Beaune side tend to give more richness and concentration whereas vineyards on the Pernand side (where Les Lavières is located) tend towards delicacy and perfume. Savigny-lès-Beaune Les Lavières is soft, supple, and delicately scented with strawberry aromas and flavors and an underpinning of minerality. Aging in 30% new Burgundian pièce brings subtle notes of vanilla and spice. Les Lavières can mature early and offers excellent near-term drinking. Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.
