Rivera’s modern winemaking results a fresh and balanced red wine with bright aromas of dark berries and long aftertaste. Serve at 16-18 ° C, denotes great pleasure and versatility in combinations. Deep ruby red; emphatic bouquet of wild dark berry fruit, with notes of black liquorice; fruit-rich palate with excellent structure.

In 1962, 19 winemakers, determined to demonstrate the high potential of wines from Salento, founded “Cantine San Marzano”. A long time has passed since then, yet their old vines still produce rare and precious grapes. Our job is to pick and enhance them, with a pinch of experience and a handful of innovation. The result is this intense, elegant Primitivo that ages well. Vine variety: Primitivo. Area: Very old vineyards selected in the area of San Marzano (TA) and Sava (TA). Soil: Finely textured residual red soil with a calcareous subsoil, sparse rocky outcrops and intense presence of iron oxides. Farming type: Head-trained bush vines at least sixty years old (5,000 per hectare). Grape harvest: Second half of September. Vinification: Very ripe grapes are harvested manually. The maceration takes place for 18 days on 80% of the grapes and for 25 days on 20%, with native yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 °C. Ageing: In French and American oak barriques for 18 months. Tasting notes: Very intense and elegant ruby red colour; broad and complex fruity fragrance with hints of plum, cherry jam and tobacco, slightly spicy; a full-bodied wine, smooth and rich in tannins, with an finish that offers notes of cocoa, coffee and vanilla. Best served with: Richly flavoured first courses, red meat and game. A meditation wine. Serving temperature: 18 °C.

Grapes: Primitivo Production: manual harvest form old vineyard. Skin maceration 15 days; 24 months aging in big barrel (1000 gallons) of Slavonian oak plus at least 12 months bottle. Color: dark ruby red with violet highlights that, after ageing, turn on garnet red. Bouquet: intense, resolute but delicate with hints of ripe fruit, prunes, black cherry and delicate nuances of vanilla and toasted almonds. Taste: vigorous, strong, finely persistent and references of liquorice and hazelnuts; good structure with a fruity and persistent finish. Food pairing: excellent with roasted and braised meats but also with well aged cheese. Alcohol content: 14% by vol. Total acidity: 5.5-6 gr/lt Best served at: 18° C – 65° F

Calcarius is an avant-garde natural wine project from Valentina Passalacqua, focused on the kimmeridgian limestone soils of her childhood town, Arpicena, at the feet of the Gargano mountains in Puglia. Valentina worked in business in London 10 years ago. After the birth of daughter, Giulia, she felt a desire to return to her homeland and engage more with nature. This area is full of calcerous limestone in the soil, white rocks jutting out everywhere amongst the vines. Combined withe the salty air from the Adriatic sea, and Valentina’s careful picking (much earlier than all of her neighbors of course) the wines of the Calcarius project are all light on their feet and very elegant. Although the wines do receive a small dose of sulfur for stability during travel, they taste like unsulfured natural wines to us, vibrant, and easy to drink. A true reflection of the elegant terroir of the region. Total Production in Bottles: 26,500 Age of Vines: 20 years Yields: 60 hl/ha Soil: Kimmeridgian Limestone Varieties: Nero di Troia Elevation: 150-200 meters Vinification Method: Grapes are hand-harvested and destemmed. The grapes ferment traditionally in stainless steel tanks with indigenous yeast only. Batonnage is performed 1-2 times per week until it is ready to be bottled. The wine is unfined and unfiltered, with a small amount of sulfur added at bottling.
