The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when François Tollot began planting vineyards in Chorey-lès-Beaune. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot are in charge. Les Lavières is named after a flat piece of stone called “lave.” This is one of Savigny’s best premier crus despite its northeastern exposure. Savigny sits in a small east-west valley perpendicular to the côte. Vineyards on the Beaune side tend to give more richness and concentration whereas vineyards on the Pernand side (where Les Lavières is located) tend towards delicacy and perfume. Savigny-lès-Beaune Les Lavières is soft, supple, and delicately scented with strawberry aromas and flavors and an underpinning of minerality. Aging in 30% new Burgundian pièce brings subtle notes of vanilla and spice. Les Lavières can mature early and offers excellent near-term drinking. Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and low tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami.

Les Malconsorts is an exceptional Vosne-Romanée Premier Cru. We are lucky enough to own 1.75 ha (4.3 acres) of this jewel, which is located close to legendary vineyards (less than 400 metres from Romane?e-Conti and less than 600 metres from Richebourg!). The name "Malconsorts" suggests that this land must once have been at the origin of disputes between “mauvais consorts” (bad partners), from the Latin word CONSORS meaning "associate, partner". These litigants would have had a common interest in a case. The prefix "Mal-" would indicate that they conducted themselves inappropriately over land that they owned jointly. The nose is fine and complex with delicate primary aromas enhanced by a subtle touch of oak. Soft, fruity notes end on a spicy finish. After a few minutes, subtle notes of peppermint and cedar develop. On the palate, all the crispiness of Pinot Noir with very pleasing, smooth, mouth-filling tannic texture.
