The Cuvée Signature range is a selection of reputed single vineyards villages, Premier and Grand Crus from Côte de Nuits and Côte de Beaune principally. They are produced in very limited quantities. The village of Meursault is located at the heart of the Côte de Beaune’s “golden triangle”, just north of Puligny-Montrachet. This is where some of the finest Chardonnays in the world come from. Those of our Premier Cru “Le Porusot” (which meant “worn stone” in Old French) cover 28.2 acres.

This is also notably ripe with an expressive and well-layered nose that features notes of essence of cassis, earth, leather and spice nuances plus a mildly curious hint of apricot. There is outstanding concentration to the big-bodied and intense flavors that also are shaped by phenolically mature tannins before ending in a suave, mouth coating and velvety finish. This is full-on and very serious and will need a very long snooze in a cool cellar before it will reach its full majority.

The 2012 Puligny-Montrachet 1er Cru Les Chalumeaux, which lies just next to Blagny, has a well-defined, precise bouquet that opens in the glass to reveal attractive smoke and granite aromas. The palate is crisp and focused on the entry with touches of apricot and tangerine. There is a fine lift on the finish that is lively and long in the mouth. This is a very satisfying Puligny that I suspect will offer much pleasure in its youth.

"Grancey" was the name of the last owners of the chateau situated on the road of Corton, before the Latour family bought it in 1891. This wine, produced by Maison Louis Latour, is unique and exclusive. It is a blend of four areas of Domaine Latour Corton Grand Cru: Les Bressandes, Les Perrières, Les Grèves and Clos du Roi, the proportions of which vary depending on the vintage. The average age of the vines is over 40 years. After aging individually, only the best barrels are assembled to create the Château Corton Grancey. It is a wine that is produced only if the grapes are of a perfect maturity, vintages judged inferior are systematically declassified.

The grapes come from the vineyards from the village of Gevrey-Chambertin in the north of the Côte de Nuits. Soil : clay and limestone. Medium slope. 100% Pinot Noir. Guyot pruning with different yearly works in the vineyard (pruning, trellising on wires/tying-in, thinning fruit-bunches). Harvest-picking by hand. The grapes are sorted twice (when picking the grapes and on the sorting table) then partially de-stemmed. (when needed, depending the quality of the berries a third sort is done with our optical machine), and put in stainless still thermo-regulated tanks. The alcoholic fermentation can begin with natural yeasts from the grape berries during around 3 weeks. Pumping-over (the must) very soft in order to be very careful about the substance and order to get the purest and most representative wine we can have. Soft pressing The wine is put into the cask further to a soft settling of the juice in French oak (10% for new oak). The malolactic fermentation can begin then with natural anaerobic bacterium from the juice. The ageing lasts 14 months on fine lees. We follow the lunar calendar for the bottling without fining and filtering. Gevrey Chambertin "Vieilles Vignes” is bottled when the moon is down and when the day is fruit according to the lunar calendar The Gevrey Chambertin wine has high colour, is intensively aromatic, evoking blackberries and other small red and black fruits. A well built wine, combining blending tannins with abundant mellowness.
