BOLGHERI ROSSO doc This wine is the expression of the vineyard (about 20 hectares) I planted in these last years thinking about the project "Bolgheri", that is to improve the characteristics of this terroir for a red wine with great character and pleasure. All the grapes are cultivated with traditionally and with care, in a high density vineyard (about 6,000 plants/ha) where I particularly respect the natural balance. During the harvest I select with manual work the grapes perfectly maturated and I make the fermentation without artificial yeasts, then manual submersions of the cap of the wine are carried out and pumping over procedures. After 12 months in barriques the wine is bottled and remains in our cellar for 6 months before being sold. Grape varieties: Sangiovese 30%, Cabernet Sauvignon 30%, Merlot 20%, Syrah 10%, Teroldego 10% Harvest period: from the beginning of September (Merlot) to first of October (Cabernet Sauvignon) Vineyards: Torre, Vignanova, Poderini, Campastrello Vinification: fermentation takes place in steel tanks using natural yeats. Initially with two pumping over procedures per day and in a second time only one according to how the extraction proceeds. Also the duration of maceration is estimated on the basis of frequent tasting. After the malolactic fermentation that naturally take place in November the various vinifications are assembled and start their fining. Fining: 12 months, partly in large oak casks (30 hl), partly in 3, 4 and 5 year old barriques. Longevity: 10 years

The Bolgheri DOC, on the western edge of Tuscany bordering the Tirrhenian sea, came to the world’s attention in the 1990s for its quality. The area’s exceptional climate is moderated by sea breezes, which impart a crispness and freshness to the wine, while the clay and sand soils allow white varieties like Vermentino to reach great heights of quality. Grapes come from densely planted vineyards that slope toward the sea in Bolgheri, Suvereto and Alta Maremma, and low yields produce wines with concentration and complexity. The Vermentino ferments in stainless steel tanks at controlled temperatures and then rests on the lees. The winemaker avoids malolactic fermentation to preserve the wine’s fresh, crisp fruit character and vibrant acidity. 90 POINTS

A wine made mainly from Cabernet Sauvignon was a fundamental change to the Tuscan and Piedmont tradition of Sangiovese and Nebbiolo, respectively. The innovative decision to plant this variety at Tenuta San Guido was partly due to the similarity Mario Incisa had noted between Tuscan terrain and that of Graves in Bordeaux. Rocks excavated from the “Palmetta” vineyard before replanting it in 1999 ‘Graves’, or ‘gravel’ in French refers to the rocky terrain which distinguishes the Bordeaux area; similarly, the gravely vineyard sites in Tuscany impart the same characteristics on Sassicaia, "stony ground", as its cherished French brother. The Marchese's first vintages were not warmly received. Critics accustomed to light, local wines were not encouraging; it was not taken into consideration that wines made from the more complex Cabernet Sauvignon grape would need more time to mature and develop. And thus from 1948 to 1967, Sassicaia remained a strictly private affair, only to be consumed at Tenuta San Guido. Each year, a few cases were stored to age in the Castiglioncello di Bolgheri cellar. The Marchese soon realized that by ageing the wine it improved considerably. Friends and relatives now urged Mario Incisa to experiment further with his project and perfect his revolutionary winemaking style. It was not until 1968 that Sassicaia was first commercially released – the welcome was worthy of a Bordeaux Premier Cru. Over the next few years, the cellar was moved to a temperature controlled location, steel fermentation vats replaced wooden vats, and French barriques were introduced to the aging process.
