"Funaguchi" is a truly fresh sake which is not subjected to either pasteurization or blending.   Since the draft sake is delicate, we had to solve various problems before we could commercialize it.   With our technology developed through the tradition and the enthusiasm for brewing, we strenuously solved each problem, and after trial and error, we were at last able to commercialize the draft sake in 1972. Funaguchi has an alcohol content of 19% which is slightly higher compared with the average sake.   Being rich yet light in taste, Funaguchi presents slightly different mature tastes as it deepens its maturation in a can, fresh our of the brewery, six months later, and one year later.   Since it was placed in the market in convenient aluminum cans, Funaguchi has been constantly popular and it now has many fans throughout Japan.

A flavorful, though pure and mellow Junmai Ginjo from northern Honshu's Iwate Prefecture. Fragrant nose with a floral element, soft citrus and green melon. I can see why 'yume akari' translates to 'dream and light.' Very good balance of all the delicate factors compellingly justifies the price. This sake would pair really well with a rich salmon or scallop dish.

Funaguchi is an un-pasteurized and un-diluted type of Sake and as such it is surprisingly delicate. The most damaging elements to the quality of a Sake are the light, heat and the air. So in order to deliver the unique taste of freshly brewed Sake, KIKUSUI had to revise its brewing techniques. In order to protect this delicate Sake from the damaging light rays we decided to use aluminum can to completely block out the light. Then we filled the normally 180ml cans right to the top, to 200ml, to reduce the amount of air that could come into contact with the Sake. This way we could protect this delicate type of Sake allowing more people to enjoy the flavor of pure Sake previously only available to those lucky enough to visit the

Rice: Miyamanishiki, Yuki Kessho milled to 50% Yeast: Association #10 This Ginjo is the sister to Dewasansan and is also milled to Daiginjo levels. The nose is a beautiful blend of flower blossoms, peach, radish, and spring water. It has dry start that is accompanied by a soft and creamy middle mouth filled with dried fruit overtones and a subtle melon finish. The viscosity thickens as the fluid warms in the mouth, and there is an overall floral perception from start to ending. It is a very nice example of a sake that shimmers in one’s mouth as the roundness is quite prominent and appealing.

All rice used for Yoshinogawa sake is grown in the Niigata prefecture which is known for producing crisp, clean, fragrant, silky smooth sake. Gokujo means 'excellent' and it can be used only for the top range of Ginjo style within the brewery. This sake is matured in tank for at least 6 months before bottling and Yoshinogawa bottles this sake every month to ensure its freshness. Ginjo Gokujo shows hints of stone fruits like peach and nectarine. It is lean and tight on palate with soft acidity with a hint of bitterness and some licorise/anise flavours. It has a smooth and silky mouth feel along with some nice subtle complexity.
