Distillery Notes “Henry DuYore’s Rye Whiskey speaks to our aspiration to release spirits that balance the character of their grains of origin with the influence of the years passed in oak barrels. An abiding fondness for the flavor of rye inspired us to produce our own bottling. With this Rye Whiskey, we sought to temper the admirable innate feistiness of rye with the rich, supple flavor of malted barley. Rye proved to be a worthy adversary for the old-fashioned Ransom mashing system, which we originally designed for the more cooperative malted barley. The texture of the rye grain made it impossible to push our house-mashed base wort above fifty percent rye, so we selected a well-made rye white dog to bring the rye to the forefront of our blend. We feel that the resulting whiskey retains the texture, aromatics, and flavor of an artisan pot distilled spirit. We are proud to offer up this whiskey as a fitting tribute to the legendary old moonshiner Henry DuYore. Although he is now completely reformed, Henry’s true identity cannot be revealed. Unlike most spirits, vodka gets its flavor entirely from its primary ingredients, whether that be potatoes, grains or even gimmicky things like apples or grapes. For the distiller and connoisseur, the challenge is finding the right ingredients and using them in the right proportions. To that end, we tried scores of combinations and, in the end, landed on a mixture of spelt and triticale. (Spelt is a strain of wheat that imparts nutty sweetness. Triticale is a centuries-old hybrid of wheat and rye, bringing smooth creaminess.) Equally important to our process is the fact that we distill artfully – not over-distilling. Once for purity, twice for smoothness. That’s it. The result is a vodka that’s unlike any you’ve had before, and any that’s on the market today.

One of few malted rye whiskeys, the malting process in Rogue’s hand-crafted Oregon Rye Malt softens the spice notes typical of rye whiskeys and makes for a more approachable whiskey that builds in flavor. The barley in the mash bill (52% rye, 48% barley) further rounds out the taste and mouthfeel creating an easy sipping experience. Complex nuttiness is softened by light caramel and a hint of citrus leading to cinnamon, nutmeg and black pepper. A very worthy competitor to the best Calvados, in our opinion. We crush and ferment the whole apple, using Golden Delicious apples grown in the Yakima Valley, and distill. Following the customs of the Calvados makers of Normandy, the high proof apple spirit is aged in a combination of old and new Cognac barrels, made of Limousin oak, for at least eight years. The result is a beautiful amber brandy, with a remarkable amount of apple in the nose, but with the sophistication and complexity gained from all those years in oak. This has a lot of appeal to the traditional brandy drinker as well, as its color and barrel aged qualities are more familiar.

With an abundance of freshly drained Oregon Pinot noir barrels, it only makes sense to capitalize on the flavors locked within them. For this unique gin, we fill Pinot noir barrels with our Farmhouse Gin and let it rest for six months. The result is a complexly layered gin that tastes great on its own and mixed in cocktails. INGREDIENTS Cucumber, juniper berries, ginger root, orris root, orange peel, lemon peel, tangerine peel, angelica root, and coriander.
