Also, according to the old family recipe, the Chauffe Coeur Calvados is a blend made of single distilled and double distilled Calvados and therefore it has to lose the Pays d’Auge appellation for which all the Calvados have to be double distilled by law.

Calvados is an appellation in France that specializes in the distillation of cider. After being distilled, this Calvados Pays d’Auge Le Père Jules is matured in oak barrels. The barrels are carefully chosen in different sizes as they will allow the Calvados’ personality to slowly develop. Blending is the last stage before bottling. This Calvados is a blend of multiple vintages. It is aged for 3 years in oak. Still very young, this Calvados is characterized by great aromas of green apple. Fruity, slightly oaky, with aromas of vanilla and spices, it offers exemplary power and finesse. The finish is long, lively and persistent. In a cocktail, as liqueur in a tulip glass after a fine meal or in the middle of the meal (« Trou Normand »), with strong cheeses like Livarot, with coffee (served inside the cup once the coffee has been drunk as in the inns of Normandy) or a cigar.

Named after the department in France where it’s made, Calvados is responsible for some of the World’s finest apple brandy. Like Cognac, there are several grades that reflect different levels of age and quality. Fine or Trois Pommes is aged for a minimum of two years, Vieux or Reserve is aged for at least three years, while Vieille Reserve or VSOP is aged for four years, and XO or Hors d’Age is aged for at least six years but generally for much longer. Vintage Calvados is also made in the finest years and will have some the greatest ageing potential. Young Calvados should have fresh and crisp fruit however as Calvados ages it gains more depth and concentration, developing notes of baked apple and stone fruit, as well as a nutty, caramel component.

For nearly 200 years, Calvados Boulard has been produced in the town of Coquainvilliers in the Pays d’Auge region of France. Although calvados may be produced anywhere in Normandy, only the finest expressions come from the small region of Pays d’Auge. Working with a co-op of growers on 150 family-owned acres, Calvados Boulard harvests over 120 varieties of apple from the nearly 800 grown. Calvados Boulard is distilled just two times in copper pot stills before being laid to rest in new Limousin oak barrels. This combination of apples creates a product with a very fruit forward flavor profile, complexity and balance. Rustic, almost pastoral. This is clearly young stuff, particularly on the slightly rubbery and lightly vegetal finish, but it still drinks well. This Calvados VS follows the strict Calvados AOC Pays d’Auge guidelines that require double-distillations in a traditional copper pot still called an “alembic á repassé.” The fermented cidre that is used for making Calvados (called calvados cidre) is fermented for 12 months in hundred-year-old oak barrels before being distilled. The Calvados is then put in oak barrels once again and aged for two to three years.
