Popular in the late 1800’s, the last oatmeal stout was brewed before the First World War until Samuel Smith reintroduced this style in 1980. Almost opaque, with an unusually silky texture and complex, medium-dry velvet palate. Bittersweet finish.

Samuel Smith's Organic Fruit Beers are brewed and fermented at Melbourn Bros. Brewery in Stamford; then blended, conditioned and packaged at Samuel Smith's Old Brewery in Tadcaster; they are Certified Organic by the USDA-accredited UK Soil Association. While there are older breweries in England, it would be safe to say that few breweries are so little changed as this gem at Stamford, which has stood in the center of the beautifully preserved market community since 1825. From the antique grist mill to the ancient copper vessels, Melbourn Bros. remains today, a working brewery which blends the traditions of the ancient craft with that of the early industrial revolution. Closed in the 1970s, restoration with respect for the historical brewing equipment was begun by Samuel Smith's in the 1990s.

Renamed as Wild Raven in 2013 due to another beer going by the name "Raven" elsewhere The recipe for the brew came from James Kemp, who joined the team a few months ago. Previously crowned the New Zealand Home Brewing Champion in 2008 and winner of a Liberty Award, Kemp used Maris Otter, Black Patent and Chocolate malt along with Nelson Sauvin, Centennial and Sorachi hops. The beer, called Raven, has bitterness and hop character and plenty of malt flavours to give it complexity. James moved on to Buxton brewery and is now a freelance brewer

The London brewers were at the forefront of applying new scientific and technological advances to beer making. Consequently the manufacture of Porter changed considerably during its life. By the time the Old Brewery was built in 1836 Porter was a blend of 'stock' or 'stale' beer, matured in giant wooden tuns for up to two years, with young or 'mild' beer. Meantime Hospital Porter (called Naval College Old Porter in the US) is made in the same fashion. 24 months oak aging in used Bruichladdich Octomore barrels has lent a woody, intensely peaty smokiness to our 'stock' Porter, which we have blended with a younger beer. This latter adds vitality to the brew. Hospital Porter one beer that is best not over-chilled, and, like the original Porters, will mature with age. This beer has only been available on draught at the Old Brewery at the Old Royal Naval Hospital—until now. We have done our best to ensure that the beer would be recognizable to the retired sailors whom the original Royal Naval Hospital brewery was set up to supply.

The exploration of yeast strains and the different results we can achieve are beautifully exemplified in Evolver, a pale ale with a difference. 100% fermented with Brettanomyces. For the first 3 months the beer tastes the same as a fresh pale ale, then the differing flavour compounds start to shine through and after 6 months the Brett really takes hold. The brettanomyces yeast is particularly good at keeping hop flavours fresh for far longer than traditional brewing yeasts. The Evolver takes on a more complex character over time as the yeast and the hops combine to produce a new and exciting beer that will continue to evolve as the yeast slowly matures the beer. This is a beer that can be drunk fresh, as a normal pale ale or left to evolve and mature into a unique and unusual beer.
